We like to cut tiny slits into the side of the steak and insert slivers of fresh garlic about 30 minutes before grilling. Fresh cracked pepper on top is also excellent. Then to grill strip steak to perfection we use the instructions from the cookout calculator at charcoalbob.com.

I like to melt bleu cheese on my strip steaks; otherwise I'll make a pan sauce with a Pinot Noir if I seared the steaks or cooked them all the way in the pan.

If the steak is a good quality steak and is cooked properly, you won't need to mask the flavor of the steak with a sauce. A little salt and pepper should do it. No ketchup, no A-1, no worcestershire, and no marinades.

I like to stuff strip steaks with a mixture of horseradish, crab meat, a dab of mayo and a spoonful of cocktail sauce. Then I rub McCormicks Steak Seasoning on the outside and grill. Mmmmmm....

For a change from...blue cheese, garlic butter, etc...Try a Bearnaise sauce, this sauce is great with all beef dishes. This sauce can be a little tricky to make,but there is some really good package sauce mixes out there...Sherry N
