You're not alone. One of my favorite things is to take a tortilla and put it on a cookie sheet (if you have an oven). I spread a little fat free mayo on it, some basil, tomatoes, mushrooms, and some cheese. (basically whenever I have in the frig). If I have some chicken, I'll add that too. Bake at 375* for about 7 minutes. It makes a crispy, healthy and delicious pizza like meal.
Something else I make a lot is stir fried rice - take rice, onion, garlic, soy sauce or terikayi sauce, scrambled egg, and fry them together. I try to add chicken whenever I can.
The great thing is that you can make a big batch on the weekend and freeze small containers or baggies of this. It freezes GREAT.

I hear ya! My four year old daughter prefers her bean sandwiches on white bread - not toasted. I like them toasted with a little tomato.
Another meal that is fairly cheap, has some nutritional value, and tastes better than it sounds:
(prices based on my local store - yours may be different)
1.5 cups boiling water
1 pack ramen noodles (sometimes on sale for 10-15 cents)
4 oz. cooked ground meat (about 50 cents worth)
3/4 cup frozen broccoli (35 cents)
1.5 inch cube velveeta
chili powder
ketchup
You can cook the meat and start the water boiling at the same time. Crush the ramen noodles and drop them into the water once it starts boiling. When they are about done, add the noodle seasoning, stir, add frozen broccoli, stir & bring back to a boil, turn off heat, stir in velveeta and a little chili powder and ketchup. Feeds 1-2 people (depending on your appetite) for just over a dollar.
For about another 50 cents you can slice an apple to go with this dish ... yummy. My daughter likes to dip the apples into the noodles as if she is having chips and dip.

I have a few GREAT casserole... easy, cheap recipes:
Green Bean casserole: (I make it w/o the onion and just season meat well with whatever I have... it's great for leftovers!)
1 1/2 lbs ground lean sirloin
1 small onion (yellow (sweet)
can cream of celery soup
1/4 cup milk
1 can french cut green beans
1 bag tater tots
Take ground sirloin, chopped onion, and seasoning and fry it in frying pan till brown. Drain excess juice.
Mix with 1/2 the can of cream of celery soup and 1/4 of water. Put in bottom of 8x8 or 9x9 baking pan.
Take can of green beans, drain, and pour on top of meat. Place tater tots in a single layer all aross top of pan.
Mix rest of cream of celery soup with 1/4 cup of milk. pour over the top.
Cook uncovered for 30 mins at 350 degrees.
Spaghetti-O Suprise! (I just got this recipe when I was looking for easy ones since I'm pregnant and not wanting to spend a lot of times preparing meals and I love left overs)
1 big can of Spaghetti-Os
1 can of Cream of Mushroom soup (tastes best with the real stuff, not the non fat)
1 can of corn
1 lb ground beef
Brown the meat in a saucepan and drain grease (like your making tacos). Season lightly if you want.
Add the Spaghetti-Os, corn, and soup and mix. Simmer for about 20 minutes. Be careful not to let it get to a medium boil, as that will burn it - keep the heat low, just so it barely boils. All Done.
Good luck... i have tons more if you are interested. My email is DAndreucci@hotmail.com

My friend at uni eats pasta all the time!
Here's my idea (from the back of a Campbell's Cream of Tomato Soup can): Campbell's C of T Soup, Pasta, Bacon, Chicken, Sweetcorn, Peppers, maybe mushrooms, mix tehm together, and the result is gorgeous.
Stir-fry is also a good, tasty, cheap idea.

Oh, goody, goody, I've got loads of things for you! OK, if you like unusual recipes, you can try pastitsio, it's a greek recipe, tasty too. Spaghetti along with a 4 cheese sauce (regato, blue cheese, parmesan, feta cheese). A cheesepie, using feta cheese again. Pancakes with cheese and slices sausages. Steaks and mash. Always experiment with cheese and vegetables. Broccoli and cauliflower taste great when cooked properly. Omelette with cheese and mushrooms! Spinach pie! Pastitsio! Lentilles (greek style!)... Italian food! Meatballs and mash. Individual meat loaves and chips! Ah, I love food!

The best simple and cheap dish in the world is spaghetti with garlic and chilli.
Cook your spaghetti according to what it says on the packet.
Gently fry a couple of chopped red chillis with a few cloves of garlic according to your taste using plenty ( about 2 tbs ) olive oil.
Add the cooked spaghetti and stir.Finish with loads of grated parmesan. It is amazing, trust me.Some chopped parsley is good with it as well.
