breaded cod
Ingredients
• 0.84 pounds cod, fresh fillet
• 1½ cups milk
• ½ cup flour
• salt & pepper
• 2 large eggs
• ½ tablespoon water
• 2 cloves garlic
• 1 large lemon
• 1 cup bread crumbs (Panko Japanese bread crumbs)
• 2 teaspoons butter, divided
• 3 tablespoons oil, olive, divided
• 1 tablespoon parsley, fresh, chopped
Purchase the fish fillet in the morning and keep it well chilled in the fridge. An hour before eating, take the fillet from the fridge, rinse and pat it dry. Using kitchen scissors, cut the fillet into 4 portions. Place them into a large bowl and cover them with milk. Place the bowl in the fridge for about half an hour. The milk helps tenderize the fish and removes any "fishy smells" that may be present .
Meanwhile, use "standard breading procedure" to coat the fish. Get this ready while the fish is soaking in the fridge. On a plate, place a piece of wax paper and pour on the flour. Add some salt and pepper to taste. In a bowl, lightly beat the eggs with the water. Crush the garlic witha knife and add it to the eggs. With a microplane grater, zest the lemon into the eggs. On another plate, place another piece of wax paper with the bread crumbs and mix in some salt and pepper. Get another plate ready to place the breaded fillets. Slice the zested lemon to be served with the fish.
A half hour before eating, pre-heat the oven to 350 degrees. Place an aluminum-foil coated cookie sheet in the oven.
Remove the fish from the fridge and place each piece first into the flour mixture, then the egg mixture, and finally the bread crumbs. Set the plate aside for about 15 minutes to help the coating to adhere.
In a large nonstick frying pan, heat about 1.5 tablespoons of olive oil with half of the butter over medium heat. When hot, add two pieces of fish (choose the thicker ones) and pan-fry for 2 minutes, turning when the bottom is brown. Continue to cook on the other side for another 1-2 minutes. Put these on the cookie sheet in the oven to continue to cook. Add more olive oil and butter to the pan and continue with the remaining thin fish pieces. Pplace these in the oven and cook for a few minutes under the fish is cooked through (a paring nice slides easily through the fillets).
Top with a squeeze of lemon and some parsley

2 (7 ounce) cod fish fillets
olive oil
salt and pepper
For Sauce
1/3 cup olive oil
6 pieces sun-dried tomatoes, chopped
1 tablespoon capers
6 black olives, chopped
2 red potatoes, cooked and sliced
1 fresh tomato, peeled seeded and chopped
1/4 cup chopped fresh parsley
1 sprig rosemary, chopped
salt and pepper

Rub the Cod with Olive Oil, salt and pepper.
Place skin side down in hot saute pan.
Cook 3 minutes on skin side.
Turn and cook 2 minutes longer.
Place on plate in warm oven to rest few minutes.
While the Cod is resting, pour olive oil in pan.
Add rest of ingredirnts and gently warm, do not sizzle or fry ingredients, just warm through to blend flavors.
Serve over the Cod.

Pound out the stips of cod. Dip each strip in milk. Then dip in a mixture of flour, salt & pepper, then place into a frying pan that has been heated with oil.
Fry on each side until golden brown.

Mix 1 egg and 2 teaspoons water - set aside
Mix 1 cup flour or corn meal, salt and pepper - set aside
Heat oil in pan
Coat fish in egg mixture, then coat in flour mixture - place in hot oil - cook til crispy.
Drain on paper towels or newspaper
You can also add whatever spices or seasonings you want to the flour mix.

Some fish batter (any kind you like), a HOT cast iron skillet, and some cooking oil. Roll the fish in the batter and put a small amount of oil in your skillet and let it get hot. Carefully put the fish in and fry it on both sides until browned. Drain the fish on paper towels. Enjoy!
