Lutron makes a remote controlled dimmer switch. It's available at Lowe's and Home Depot.

You can get yourself a Clapper... And you can buy ceiling fans that use remote controls for lights and fan speeds.

You can get an IR transmitter/receiver kit. Have the receiver drive a solid state relay, and you can control any household AC appliance with it.
