Bourbon Chicken
Yield: 4 Servings

Ingredients

4 chicken breasts
4 oz soy sauce
1/2 c brown sugar
1/2 ts garlic powder
1 ts powdered ginger
2 tb onion flakes, dehydrated
3/8 c bourbon

Instructions

Mix all marinade ingredients and pour over chicken. Marinate
overnight. Bake at 325, basting frequently for 1 1/2 hours or until
well browned. If you double the recipe make sure that the chicken is
in a single layer.

I have a Bourbon Chicken recipe

Ingredients
4 ounces soy sauce
1/2 cup brown sugar
1/2 teaspoon garlic powder
1 teaspoon powdered ginger
2 tablespoons dried minced onion
1/2 cup Jack Daniel's
2 tablespoons white wine
1 pound chicken leg or thigh meat cut in bite size pieces

Method
Mix the first six ingredients [the marinade] together and pour over chicken pieces in a medium bowl.
Cover and refrigerate, stirring often, 6 to 8 hours or overnight [preferred].
Bake chicken at 350 for one hour in a single layer, basting every
10 minutes. Remove chicken. Scrape pan juices with all the brown bits into
a frying pan. Heat, and add 2 Tbs. white wine. Stir and add chicken.
Cook for 1 minute and serve.

The Travelling Gourmet's Stir Fry Chicken with Peppers

Ingredients

4 Boneless Chicken Breasts cut into strips
1 Red Capsicum cut into squares
1 Yellow Capsicum cut into triangles
1 Green Capsicum cut into diamonds
1 Onion cut into strips

Method

Stir fry the lot on high heat with a dash of sesame oil, Nuoc Mam Sauce, Light Soy Sauce, white pepper freshly ground and Oyster sauce.
Garnish with julienne of Spring Onion and Coriander
Serve with steamed long grain Thai rice
Enjoy!

Stir Fry Cashew Chicken

Ingredients
Serves 6
5 Boneless skinless chicken breast halves -- cut into 1-inch strips
3/4 cup Orange juice
1/3 cup Honey
1/4 cup Soy sauce
1 tablespoon Cornstarch
1 teaspoon Ground ginger
1 teaspoon Garlic powder
2 tablespoons Vegetable oil
4 Green onions -- chopped
2 Large carrots -- sliced
1 Celery stalk -- sliced
1 cup Cashews
6 cups Brown rice -- cooked

Preparation

In a large bowl, combine juice, soy sauce, honey, cornstarch and seasonings.


In a wok or large skillet, heat 1 tablespoon oil until it begins to smoke. Stir-fry vegetables for several minutes until the onions become fragrant.


Remove veggies from skillet and heat another tablespoon of oil until smoking and stir-fry chicken strips until browned and tender.


Now add the cooked vegetables, cashews and sauce mixture.

Continue to cook until sauce bubbles and thickens. Serve atop brown rice



Honey Chicken Stir-Fry

This is a wonderful recipe and is easy to make. I seem to be able to prepare it more quickly each time I make it.

Ingredients
1 lb. Boneless skinless chkn. breasts, cut into 1 in. pieces
1 Garlic clove, minced
3 tsps. Olive or canola oil, divided
2 tbsp. Reduced-sodium soy sauce
1/8 tsp. Salt
1/8 tsp. Pepper
1 pkg. (16 oz) frozen broccoli stir-fry vegetables
2 tsps. Cornstarch
1 tbsp. Cold water
Hot cooked rice

Preparation
In a large nonstick skillet or wok, stir-fry chicken and garlic in 2 tsps oil. Add the honey, soy sauce, salt and pepper. Cook and stir until chicken is lightly browned and juices run clear. Remove and keep warm.


In the same pan, stir-fry the vegetables in remaining oil for 4-5 minutes or until heated through. Return chicken to the pan; mix well. Combine cornstarch and cold water until smooth; stir into chicken mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Serve over rice.

One Dish Bourbon Chicken
INGREDIENTS
1 tablespoon butter
2 tablespoons olive oil
1 clove garlic, minced
1 onion, chopped
4 skinless, boneless chicken breasts
2 tablespoons chicken stock
2 tablespoons bourbon
salt and pepper to taste
DIRECTIONS
In a large skillet, melt butter or margarine and add olive oil. Saute garlic and onion until translucent. Remove garlic and onion from skillet with a slotted spoon.
Add chicken breast halves to skillet and brown on both sides. Return garlic and onion to skillet. Add broth and bourbon and stir all together. Cover and let simmer over very low heat for 20 to 25 minutes, or until chicken is tender and done (chicken juices run clear).



Garlic Chicken Stir Fry
INGREDIENTS
2 tablespoons peanut oil
6 cloves garlic, minced
1 teaspoon grated fresh ginger
1 bunch green onions, chopped
1 teaspoon salt
1 pound boneless skinless chicken breasts, cut into strips
2 onions, thinly sliced
1 cup sliced cabbage
1 red bell pepper, thinly sliced
2 cups sugar snap peas
1 cup chicken broth
2 tablespoons soy sauce
2 tablespoons white sugar
2 tablespoons cornstarch
DIRECTIONS
Heat peanut oil in a wok or large skillet. When oil begins to smoke, quickly stir in 2 cloves minced garlic, ginger root, green onions and salt. Stir fry until onion becomes translucent, about 2 minutes. Add chicken and stir until opaque, about 3 minutes. Add remaining 4 cloves minced garlic and stir. Add sweet onions, cabbage, bell pepper, peas and 1/2 cup of the broth/water and cover.
In a small bowl, mix the remaining 1/2 cup broth/water, soy sauce, sugar and cornstarch. Add sauce mixture to wok/skillet and stir until chicken and vegetables are coated with the thickened sauce. Serve immediately, over hot rice if desired.
