He knows it all but He doesn't control us. That's where our free-will comes into play. He knows us before we are even formed in our mother's womb. But we aren't puppets on strings that He plays around with. He tells us the Dos and Don'ts and our wills help us choose what to do and what not to do.
I am Catholic as well. Raised Catholic, went to Catholic school. But it wasn't until 4 years ago that I was introduced to the Catechism of the Catholic Church. It explains the Bible. Some of it is hard to understand. I have to read things a few times to get it. But if you are wanting to learn about the Catholic faith more, I suggest this book. It is from the papacy. It's been updated since the Vatican II Council..

If I'm not mistaken, Catholics hold a semi-Pelagian view of salvation, where God and Man work together. Since original sin is wiped away in baptism, Man is neutral through that rite. God dispenses merits for a holy life and avoidance of Hell through the Church, so I don't know that Catholicism focuses on foreknowledge in that light. It may very well just be a mystery.
