All depends on the supermarket and the many varieties they sell. Most are aweful but I have had a few that weren't too bad either! Hannaford sells one that is white based with red potatoes! I don't like the yellow egg based or mustard based!
This is my own that I congered up while in culinary school:
6 large red or white potatoes peeled and par boiled.
1 small onion chopped fine ( I prefer Vidalia or Texas Sweet)
1 cup mayonaise (adjust to accordingly)
1-2 teaspoon of a good dijon mustard
2-3 tablespoon white balsamic vinegar
1-2 tablespoon worchestershire sauce
1 tablespoon sugar
salt and pepper to taste
juice of 1 fresh lemon
parsley
A couple of tips are: Don't cook the potatoes all the way like you would for mash potatoes- leave them "aldente" if that word applies. They will continue to cook as they are warm which is required to absorb flavors.
I also use scallions instead of onion on occassion as personal preference. Works great for me! If I do use regular onions I use Vidalia or Texas Sweet. (personal preference)
You will need to adjust according to taste. I generally do not measure and so therefore "guesstimated" because as a professionally trained chef I know what I'm looking for and how to get there! If it's too acidic-add more sugar. If it's too sweet-add more acid. If you want thinner-add more mayo. If you like stronger flavors of some ingredient-add more or less accordingly--- to taste! If you like crunch-add celery! You can also vary the potato according to preference! Your choice!

I've noticed that most supermarket potato salads use a combination of yellow mustard and Miracle Whip as their dressing. You might want to take that into account when you're making your potato salad.

I think you are asking about the texture of the salad. Cool the potatoes to warm. Make a dressing of mayo, sour cream and a teaspoon of white vinegar, add in your favorite herbs. Toss the salad while it's warm so the dressing sticks to the potatoes.

Southern Potato Salad:
INGREDIENTS
4 potatoes
4 eggs
1/2 stalk celery, chopped
1/4 cup sweet relish
1 clove garlic, minced
2 tablespoons prepared mustard
1/2 cup mayonnaise
salt and pepper to taste
DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain and chop.
Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; peel and chop.
In a large bowl, combine the potatoes, eggs, celery, sweet relish, garlic, mustard, mayonnaise and salt and pepper. Gently mix together and serve warm.

5 large potatoes, peeled and chopped

2/3 cup extra virgin olive oil
1/2 cup white wine vinegar
1/3 cup chopped fresh parsley
DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
In a large bowl, mix together the garlic, olive oil, vinegar and parsley. Add potatoes and toss to evenly coat.
Cover and refrigerate overnight.

i alway's make my own potatoe salad don't really like the shop one's. boil potatoes just untill there tender mix mayo or salad cream and chill in fridge over night . then sprinkle chopped chive's over them. you can always use tin potatoes but the real things the best.

really simple, chopped new/salad potatoes, add a good dollop ap mayo and the same of salad cream, a squeeze of lemon juice and some finely chopped spring onion or chives, mix together and serve.

boil new pototoes with some mint, drain and leave to cool
chop into smaller pieces
chop some chives and spring onions and place in bowl with potatoes
stir in lots of mayo...enough to cover all potatoes and as much as you will like (to be dead posh make the mayo too but i dont know how to do that)

Par boil the spuds, drain, disect into bite size pieces, place in bowl, add salt and pepper, add egg mayonaise and diced spring onions or shallots, depending what you call them. gently mix in together and serve with thin srips of red capsicum as a garnish. bon a petite!
