Ingredients
2 cups milk
1 cup sugar
6 egg yolks, lightly beaten
1 cinnamon stick
3/4 teaspoon ground cinnamon
1 tablespoon pure vanilla extract
1 pint heavy cream
Method
Beat milk, sugar and egg yolks in the top of a double boiler until frothy. Add cinnamon stick and ground cinnamon. Set over simmering water and heat 15 minutes, stirring now and then at first, constantly toward the end. Cool, add vanilla and cream. Remove cinnamon stick. Freeze in a crank – type freezer [hand or electric] or automatic ice cream machine, following the manufacturer’s directions.

Snickerdoodle Cookies
1 1/2 cups Sugar
1 cup Shortening -- soft
2 each Eggs
2 3/4 cups Flour
2 teaspoons Cream of tartar
1 teaspoon Baking soda
1/2 teaspoon Salt
2 tablespoons Sugar
2 teaspoons Cinnamon
Preheat oven to 375F.
Mix 1 1/2 c. sugar, shortening and eggs. Stir in flour, cream of tartar, and soda. Chill dough. Roll dough into balls the size of walnuts. Com- bine 2 t. sugar and cinnamon. Roll cookies in this mixture.
Bake for 8-10 mins., cool completely on wire racks.

Cinnamon is great with apples - baked or stewed, it can be used in rock cakes (rough looking cakes made with sultanas, raisins and spices) or it can even be used in savoury cooking - try adding a tiny amount to minced lamb when you are frying it off to give your Moussaka that extra zing!

Cinnamon goes well with apple pastries such as strudel, or you sprinkle a little on vanilla ice cream and great on toast prepared the french way, ie toasted in a pan using egg.

Cinnamon can be used to add flavour to the icing sugar on doughnuts, give a boost of flavour to fruity pancakes if you put it in when boiling the fruit, or just adding it to cake to give it that little bit extra.

I like to cook apples in butter and sugar and add cinnamon - serve over ice-cream. Tastes divine!

Cinnamon is used in apple pie, apple crisp or crumble. It is used in small amounts in rice pudding and some cobblers like peach.
