Every time i bake a cake either there is an earthquake or the cake sticks to the sides of the pan - I am using a sharp microwave oven and hence i have to use only glass dishes for my baking. Even though i apply a lot of butter on to the glass dish before putting in the cake batter it sticks to the bottom. I turn it out when its still hot, but at times the cakes doesnot come out - its like sticking to the bottom of the glass pan and then its all a mess. want to know three things
1. how do i avoid the cake sticking to the bottom????
2. How to avoid the earthquake??
3. Any good easy receipes for a fluffy cake????

Butter and then lightly flour the pan. Shake out extra flour. You can use this product as an alternative: "Bake Easy". It's a spray used by bakers.
BTW microwaves do not produce the best cakes. The microwave process effects the overall texture of the cake. Using a regular oven will give you a better product.
Sorry, I don't have any suggestions re earthquakes beyond listening to the news.
You can make any cake mix fluffier by adding one extra regular egg.

I really don't have information about your earthquake .... however....
in order to get the cake out of the pan without some of it sticking to the bottom.... butter it as usual and then butter a paper the same shape as the bottom of the pan (turn it over and cut it out with a pair of scissors ...), butter one side of it and put it -- butter side up -- into the pan.//////....When you remove the baked cake from the oven, be sure to let it sweat a little (that is leave it in the pan for about 10 minutes ).....run a knife around the cake just inside the baking dish to release the sides.... and carefully without burning yourself, invert it onto a tea towel covering your palm , remove the paper.... and then put it bottom side down onto a wire rack or a dish to cool ....
Now for a fluffy cake....
1 be sure to cream the butter well so it is light colored and fluffy
2 beat only half the sugar into the butter
3 separate the egg yolks from the whites, put the yolks into the batter you have started with the butter and sugar
4 beat the egg whites with the rest of the sugar until it holds nice peaks .........set aside a few minutes (be sure your bowl is clean and that none of the yolk gets into the whites .... and that your beater is absolutely clean)
5 put the rest of the ingredients (flour, milk or cream, and flavors)
6 carefully add the egg whites and gently fold them into the cake batter just so there are no streaks of white showing
7 pour the batter into your prepared pan ...and bake it .....
Hope this works for you!

1)after greasing the dish, flour the bottom.only the bottom and not the sides because i don't think you can flour the whole dish if it's being cooked in the microwave.then pour in the batter and see if this makes a difference.also before turning out,run a thin knife along the sides of the dish to loosen the cake from the sides so it comes out easier and cleaner.
2)what is an earthquake?!
3)the best fluffy cakes are pound cake types.go to www.allrecipes.com for some really good and very workable recipes.

As a professional pastry chef I can tell you right off the top of my head---Get rid of that MICROWAVE! If you don't have a regular cook stove with oven, purchase a convection oven which are readily available for about $100!
You need to butter the pan and then flour it or you can also use parchment paper which works the best!
You will never get "fluffy" in a microwave!
Since no one has appointed me to the position of "GOD" I can't help you with earth quakes! My only sugestion would be to MOVE elsewhere!

You need to butter AND flour the pan. You could use a non-stick spray, but you'll still need to flour, just a very light coat, shake out any extra.
I'll be honest, I've never had luck with baking in the microwave. I know it can be done, but I think you need to alter the ingredients or method for it to come out right.
