Well, right off the bat, Champagne is bubbly and cognac isn't. From there, they really have nothing in common other than name (fine cognac can be called Champagne cognac) and both being made from grapes.

Typically, it's a different type of grape - Champagne usually comes from Pinot Noir, Pinot Meunier, and/Or Chardonnay and Cognac usually from Ugni Blanc.

Champagne goes through 2 fermentation processes, the latter in a sealed bottle (this produces the bubbles). Cognac is distilled twice, both times in Copper Stills. Cognac is then aged in oak barrels.

Champagne comes from the Champagne region in France - much of it from Epernay and Reims and the surrounding cities. Cognac comes from the Cognac region in France.

Champagne must be aged 18 months for a non-vintage selection and 3 years to declare a vintage. Cognac must be aged 2 years before it can be called "cognac".

The two finest areas for Cognac are the Grande and Petite Champagne regions .If your Cognac comes exclusively from these regions(and at least 50% is from the Grande region you can be called Fine Champagne Cognac. Remy Martin is the only Cognac producer who has the capabilities to put that designation on every bottle.

A lot, but I am not good with grape-based alcohols. Upsets my system. Fine cognac is a higher quality of brandy. Cognac is distilled a certain way in France. Fine champagne is a lower grade than regular quality champagne but is better than the cheap stuff, like Baby Duck and such.

yes. Champagne and Cognac are to seperate regions of France(towns) Champagne is famous for making quality sparkling wines from chardonnay and pinot noir grapes, Cognac is famous for making brandy, usually from ugni blanc grapes.
So a sparkling wine made in Champagne france is simply referred to as "champagne" just as a brandy made in Cognac France would be referred to as "cognac".
This is not the the only technical differences. These wines also differ greatly in the way they are made. not to mention the huge difference in over all taste and visual profile of each of these wines

Cognac, named after the town of Cognac in France, is a brandy, which is produced in the region surrounding the town. It must be made from at least 90% Ugni Blanc, Folle Blanche, or Colombard grapes. The rest of the cognac can consist of ten selected grapes. However, most cognac is made from Ugni Blanc only. It must be distilled twice in copper pot stills and aged at least 1/2 to 2 years in French oak barrels in order to be called cognac.

Simply put, Cognac is distilled Champagne. There's more to it than that, but that's the most basic way of putting it.

There are technical differences - One is a sparkling wine the other a spirit. A fundamental technical difference don't you think? eg chalk and cheese
