You use the drummy part of a chicken wing & cut the meat & pull it up to the top. I like them marinated in teriyaki, sesame oil and green onion w/ a bit of garlic & fresh grated ginger.

Ingredients Method
Chicken, wings with skin 8 nos.
Eggs 2 nos.
Green chilies, ground 6 nos.
Ajinomoto ¼ tsp.
Pepper powder ¼ tsp.
Garam masala ¼tsp.
Chili sauce ½ tsp.
Soya sauce ½ tsp.
Worcestershire sauce 1 tbsp.
Flour ( maida ) 50 gms.
Ginger, paste 1 tsp.
Garlic, paste 1 tsp.
Yellow colour or red colour A pinch
Water ½ cup
Oil for deep frying As required
Salt ½ tsp.
1. Cut the wings into two, chop the end bone, pull the flesh up with the skin and remove the thin bone and mould into a lollipop.
2. Boil the lollipops with ½ cup water, ½ tsp.salt for 5 minutes and with 1tbsp Worcestershire sauce for 5 minutes. Remove and cool.
3. Mix all ingredients thoroughly, except lollipops and prepare a thick batter.
4. Heat oil in a deep pan, dip lollipop into the thick batter and fry on medium heat to a light brown colour.
5. Serve hot with szechwan sauce.

45 min 15 min preparation time
Change to: servings US Metric
4-5 large chicken wings (8-10 chicken lollipops)
2 small size eggs
6 green chilies (ground)
1/4 teaspoon black pepper
1/4 teaspoon garam masala
1/2 teaspoon chili sauce (( get a thick chilli sauce that is like tomato ketchup))
1/2 teaspoon soya sauce
1/2 teaspoon Worcestershire sauce
50 grms all-purpose flour ((or more if required))
1 teaspoon ginger paste
1 teaspoon garlic paste
1 drop red food coloring (optional) (I do not use this)
1/2 cup water
oil (for deep frying)
1/2 teaspoon salt
1-Cook the lollipops in salted water for 5 minutes.
2-Take them out of the water dry them thoroughly.
3- Saute in just the worcestershire sauce for another 5 minutes. Till they are completely dry.
4- Mix the rest of the ingredients to make a thick batter as for pancakes.
5- Dip each lollipop into this batter and deep fry.
Variation: The other option is to bake (a low cholestrol option) these after sauteing them in the worcestershire sauce
Minus the eggs and the flour from the rest of the ingredients so that it forms a sauce rather than batter.
Bake or grill at 180C till they are cooked and browned.
Serve with Schezwan sauce.

you get lolypop pieces ready in market or cold storage. prepare battar by using corn fllor, maida, egg white, chilli powder, red colour very little. Let the whole thing marinate for 1 hour. Then deep fry till done. Eat it with Chezwan sauce.
