You will need to know alot of math and physics
Algebra - vector algebra, algebra of matrices
Physics- Newtons laws of motion and Maxwell's 4 equations of electromagnetic phenomena
Calculus - level 1,2, and 3, and level 4-differential equations
Chemistry - levels 1 and 2
other math - statistics
computers - the more proficient with computers you are, the better. Any programming languages, especially C++. Also Microsoft Excel proficiency is very helpful

I will echo the first answerer partly.

Depending of the following engineering fields: Chemical, Electrical, Industrial, Biomedical or Biological Engineer it is important to take Calculus, Physics, and Chemistry (all of the AP variety) and in this order. Depending on how well you learn these courses, though, you will want to consider taking them again, especially if you go to a top tier engineering school (but maybe an honors variety).

Biology would not be a good AP course due to the extreme changes within this field in the last 5 years if you plan on going into one of the biomedical engineering/technology fields).

absolutely...take all the math you can, that is number one. If you have the opportunity, you want to get into AP calculus by your senior year.

After that, take any or all of the sciences that you can, with priority on physics, then chemistry. Biological sciences are equally important dependent upon what type of engineer you want to be. Any science is helpful because learning the scientifid method is as important as learning the facts associated with each particular branch of science.
