Caesar salad
INGREDIENTS
4 rashers bacon, sliced thinly into 2-3 cm strips
5 eggs, good quality organic
1/3 cup olive oil
1 clove garlic, crushed
½ loaf Turkish bread sliced thinly (6-8mm slices)
sea salt and freshly ground black pepper
1/3 cup grated parmesan
1 cos lettuce, washed, dried and roughly chopped (small leaves can be left whole)
8 anchovies: 4 sliced thinly lengthways for the salad, 4 finely chopped for the dressing
1 cup freshly shaved parmesan
Dressing
2 egg yolks
4 anchovies, finely chopped (see above)
1 clove garlic, blanched and finely chopped
1½ teaspoons Dijon mustard
2 teaspoons red wine vinegar
¼ cup olive oil
¼ cup vegetable oil
1 tablespoon lemon juice
1 soft boiled egg (see above), grated
salt and freshly ground black pepper
METHOD
In a large non-reactive frypan, cook bacon until crisp, then drain it on absorbent paper and cool.
Bring a medium-size saucepan of water to the boil. Using a slotted spoon, place eggs in boiling water. Cook 7 minutes. Remove and cool under running water, then chill.
Preheat oven to 170°C fan-forced.
In a small bowl, combine olive oil and garlic.
Spread Turkish bread evenly on a flat baking tray.
Using a pastry brush, baste the Turkish bread on both sides with the garlic oil, season lightly and sprinkle with grated parmesan cheese. Cook in preheated oven 15-20 minutes (watch carefully as croutons burn easily) until golden. Remove and cool (may be stored in an airtight container until needed).
Peel eggs and quarter four of them. Place eggs in a large mixing bowl with lettuce, bacon, 4 anchovies, half the shaved parmesan and half the croutons, crumbled if desired. Reserve a few good looking croutons to garnish each salad.
Dressing
In a medium-size mixing bowl, combine yolks, anchovies, garlic, mustard and vinegar. Whisk until smooth.
Add combined oils very slowly and in a thin stream whilst whisking. Continue until all oil is incorporated (if dressing becomes too thick, add a little hot water and whisk to combine). Add lemon juice to taste, add grated eggs, stir to combine and season lightly.
Pour dressing over salad and toss lightly. Divide and serve in four service bowls or in one large presentation bowl. Top with remaining croutons and parmesan cheese.
If the cos lettuce leaves are of good quality, young and sweet, the leaves may be left whole and the salad can be built by layering ingredients on top of them and then drizzling the dressing over it.

Italian Caesar Salad
Make a classic Caesar salad as a side dish or a main meal.
Did you know that the original Caesar salad was created in 1924, by Caesar Cardini. Cardini was an Italian restaurateur in Tijuana, Mexico. A bit of food trivia to immpress your guests.
Caesar Salad
Ingredients
3 cups croutons
3 garlic cloves, crushed
1 cup extra-virgin olive oil
1/2 tsp salt
2 eggs
1 head romaine lettuce
black pepper, freshly ground
2 Tbs fresh lemon juice
1 tsp Worcestershire sauce
1/2 Tbs Dijon mustard
1/2 cup Parmesan cheese, freshly grated
8 anchovy fillets*
bowl of ice water
Directions
Trim the romaine lettuce leaves. Tear into pieces (about 1").
Wash and drain the lettuce, roll it in a towel and refrigerate for 30 minutes to crisp the leave.
Mash the cloves against the sides of the bowl with the back of a wooden spoon withh 4 Tbs of oil and 1/4 tsp salt.
In a small pan bring 2 cups water to a boil over high heat. Add the eggs and cook for 1 minute--No more!
Chill the eggs in ice water to stop the cooking. Set the eggs aside.
Add the anchovy fillets and mash with the spoon.
In the bowl add the remaining olive oil, lemon juice and Worcestershire sauce. Mix well with a wire whisk.
Break in the eggs and whisk again until the dressing is creamy.
Toss in lettuce, Parmesan cheese and croutons.
Serve from the bowl.
*--If you are not an anchovy fan try a tsp of anchovy paste. It has a milder flavor than anchovy fillets.
Note: Traditionally Caesar salad is made in and served from a wooden bowl. Shrimp makes a fantastic topping to Caesar salad, especially if you have forgone the anchovies.

I have this easy dressing and also a recipe for the salad with good directions -- Good Luck
Easy Caesar Dressing
3/4 cup prepared Italian dressing
1 tablespoon grated Parmesan cheese
1 tablespoon sugar
1/3 cup mayonnaise
1 teaspoon soy sauce, fish sauce, or anchovy paste
Combine all ingredients; whisk until well blended. Keep refrigerated for up to 5 days.
Makes 1 cup.
Caesar Salad Recipe
And here is a Caesar salad recipe with a different dressing –
1 head romaine lettuce
3/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 tablespoon ground mustard
1 clove crushed garlic
1 egg
1 lemon, juiced
Freshly ground black pepper
1/4 cup grated Parmesan cheese
1 1/2 cups garlic croutons
1 (2 ounce) can anchovy filets
Clean lettuce thoroughly and wrap in paper towels to absorb moisture. Refrigerate until crisp, at least 1 hour or more.
In a bowl or jar combine oil, vinegar, Worcestershire sauce, salt, mustard, garlic and lemon juice. Whisk until well blended.
Coddle egg by heating 3 cups of water to boiling. Drop in egg (still in shell) and let stand for 1 minute. Remove egg from water and let cool. Once cooled crack open and whisk egg into dressing. Whisk until thoroughly blended.
Mash desired amount of anchovies and whisk them into the dressing. If desired set aside a few for garnish.
To assemble, place torn lettuce leaves in a large bowl. Pour dressing over the top and toss lightly. Add the grated cheese, garlic croutons and freshly ground pepper, toss. Serve immediately!
(I don’t like anchovies so I use the easy recipe with the soy sauce). ~-~

Why don't you have chicken caesar salad? It's better!
You just need:
Cos lettuce
Chicken breast
Bacon
Bread (or croutons if you like)
Grated parmesan cheese
Cut the fat off the chicken and cut it into chunks. Cut the bacon into small squares and the bread into small squares also.
Throw it all in a pan and cook it until the chicken is brownish and the bacon and bread is crunchy.
Tear some leaves off the lettuce and break them up a bit, chuck it in a bowl with the chicken, bacon and croutons and top with caesar salad dressing and the grated cheese. Yum.
