how long is it likely to take to pan fry, on medium heat. i will probably thinly slice the yam.

should i season it with salt or anything, dip them in oil?
what method do u find works best?

I deep-fry sweet potatoes at work, but not at home (there are deep-fryers at work). I slice the sweet potatoes just like "steak fries" -style french fries...in strips, about a half-inch thick. I deep-fry them just like french fries; the oil is about 360 degrees, and they take about 4 minutes.

At home, I don't have a deep fryer, so if I want fried sweet potatoes, I slice them into very thin disks (as thin as possible), and I leave the skin on. I drop the slices into icewater as I go (until I have the whole sweet potato sliced up). Then I lay the slices on a towel, to dry them off...you don't want to put anything wet into hot oil.

I'll heat about a half-inch of oil in a heavy pan, and just fry one layer of sweet potatoes at a time. I just watch them, and when they're a little browned, I'll flip them over and do the other side. The whole procedure takes 5 minutes or less.

And no matter how they're cooked, I always season (just salt and pepper) right after they come out of the oil

well.. seems like u are asian?
For me, i usually slice thinly the yam or sweet potato and then dip them in egg wash and then flour with sugar and floor and deep fry. Very nice, must try.
