I'm thinking about trying a recipe for meringues and I am wondering what I will do with the leftover egg yolks. Any ideas?

Egg yolks can be frozen and thawed when a recipe calls for them. Even if you add only one extra yolk to a recipe that calls for eggs it add a richness to the product, like Hollandaise sauce

Beat them with sugar until very light. Makes a delicious desert.
Can also be used as the base for an excellent layer cake.

May I suggest a flourless chocolate cake, or perhaps ice cream? Custards are a great way to use up yolks too, you could make creme brulees. :)

give them to your dog or cat (in smaller doses). Egg yolk is good for their coat and a good source of protein.

have to agree with Jim G, use for the hollandaise in an eggs benedict, or in an Aioli perhaps

Crack open the eggs. Put one on each elbow, say coca loca and then do not shave your leggs for 5 days if you're a girl. If you're a boy, grow a gotee.

you could make custard , icecream , cheese cake, bake a cake , chocolate mousse,hollandaise sauce, bernaise sause, mayonaisse, salad dressings, that should do it
