Egg yolks can be frozen and thawed when a recipe calls for them. Even if you add only one extra yolk to a recipe that calls for eggs it add a richness to the product, like Hollandaise sauce

Beat them with sugar until very light. Makes a delicious desert.
Can also be used as the base for an excellent layer cake.

May I suggest a flourless chocolate cake, or perhaps ice cream? Custards are a great way to use up yolks too, you could make creme brulees. :)

give them to your dog or cat (in smaller doses). Egg yolk is good for their coat and a good source of protein.

Crack open the eggs. Put one on each elbow, say coca loca and then do not shave your leggs for 5 days if you're a girl. If you're a boy, grow a gotee.
