Easy Hamburger Pie
Hamburger pie with a cornmeal crust.
INGREDIENTS:
1 pound lean ground beef or ground chuck
1/2 cup chopped onion
1 teaspoon salt
2 teaspoons chili powder
dash Worcestershire sauce
1 (14 1/2 ounce) can diced tomatoes
1 (15 ounce) can green peas, drained
1 (15 ounces) can whole potatoes, drained, diced
1 (12 to 15 ounces) can whole kernel corn, drained
1 cup cornmeal
1 cup flour
1 tablespoon salt
1 tablespoon baking powder
1 egg, beaten
1 1/4 to 1 1/2 cups buttermilk
PREPARATION:
Brown beef in skillet, along with onion, salt, chili powder, and Worcestershire sauce. Spread meat mixture in bottom of an oiled 13x9x2-inch baking pan; combine drained vegetables and spread over meat layer.
Combine cornmeal, flour, salt, and baking powder. Stir in beaten egg and buttermilk to make a soft dough. Mix well and spoon over the vegetable layer. Bake at 400° for 35 to 45 minutes, or until cornmeal topping is nicely browned. Easy hamburger pie serves 8.
Basic Lasagna with Meaty Sauce
Basic lasagna recipe with ricotta cheese.
INGREDIENTS:
8 ounces lasagna noodles
2 tablespoons salt for cooking water
1 tablespoon olive oil
16 ounces low fat ricotta cheese
8 ounces sliced Mozzarella cheese
Sauce
1/3 cup grated Parmesan cheese

1/2 cup finely chopped onion
2 cloves garlic, minced
3 tablespoons olive oil
1 pound ground chuck or round
1 large can (28 ounces) tomatoes
1 can (6 ounces) tomato paste
2 teaspoons salt
pinch cayenne pepper
1 teaspoon sugar
1/4 teaspoon dried basil
1 bay leaf
2 cups water
PREPARATION:
Start sauce about 30 to 45 minutes in advance.
Sauté onion and garlic in olive oil until onions are soft; add ground beef and brown. Pour off excess fat. Add remaining ingredients; stir well. Simmer slowly, uncovered, for 1 hour.
Cook noodles in boiling water with 2 tablespoons of salt for about 25 minutes, or until tender, stirring frequently to prevent sticking. Drain; add 1 tablespoon olive oil. Arrange noodles in a shallow 2 1/2-quart baking dish. Make 3 layers each of noodles, ricotta cheese, Mozzarella cheese, meat sauce, and Parmesan cheese.

Fry up some hamburgers - and then while the pan is hot and there's lots of burger juice in the bottom, throw in a cut-up onion - stir it around and give that a good little fry - and about the time it's turning sort of clear - dump in some red wine - a good 1/2 cup - maybe more. And make it wine you'd ordinarily drink too - not some rot-gut just for cooking. Turn up the heat - dump in the wine and stir like crazy as the alcohol burns off - and when it settles down, put the burgers back in and get them all wet with onions and wine sauce. This is about as easy as there is - and it tastes and smells like some fancy French restaurant. Have a bunch of mashed potatoes ready - and maybe some broccoli steamed..... Ummm French Bread! Always the right choice.

Not everyone loves pasta. With that said, I am assuming that this is a social event if 20 people are attending and what is worst that a huge tomato sauce stain on one of the guest or having garlic breath while trying to socialize. My idea would be to do baked chicken breast (wrapped in aluminum foil for maximum moisture and easy clean-up) with wild grain rice and Campbell cream of mushroom/chicken soup. Who doesn't love chicken? Baking it will keep the meal healthy along with the rice. The vegetable should be determined depending on the occasion. Not everyone loves asparagus and corn on the cob can look tacky while broccoli gives gas. Consider sauteed squash or seasoned steamed carrots. You can also Make this into a casserole if you layer slice the chicken afterwards and layer onto the rice and top with the campbell's.Good Luck.

Here are a few thoughts:
Chicken Stuffing Bake
Chicken Breast, chunked (about 12 breasts)
Cream of Mushroom Soup (3 cans)
Milk (3 Cups)
2 boxes of stuffing, prepared.
Put the chicken breast is the bottom of a 9x13. top with the soup and milk, mixed together. Spoon Stuffing over the top. Bake at 350 for 40 minutes or till chicken is done. Serve with a salad and french bread.

Go to Food Network and try Rachel Ray's Salsa Stoup recipe. Just double the recipe.
Serve with baked nachoes
Tortilla chips layered with cheese, taco meat, tomatoes and onions. Make a few layers and bake in a 9x 13 pan till cheese is melted. Finish with salsa, sour cream and shredded lettuce.
Mexican corn bread.
Buy those corn bread mixes at the store and add cheddar cheddar and diced jalapeno.

Baked Ziti with garlic bread and salad is always a hit.

assuming you eat pork... buy a large pre-cooked ham from grocery store. place in large pyrex pan drizzle with honey and coat withbrown sugar. bake at 350 fo r1-11/2 hours
in same oven put cleaned, foil wrapped yams and bake with ham for roughly same time or until soft. remove skin from yams and mash with butter and add a little brown sugar for flavor. I like to add fresh diced granny smith apple as well.
Those 2 are soo easy...add a large green salad and a store bought dessert. these all look elegant on a plate Voila a meal for 20 that only takes about 20 minutes of prep. You'll probably spend more time doing your hair and make-up!

Scalloped Potato's For 24
2 32 ounce bags of frozen cottage-fried potato's
1/2 cup butter or margarine
1/2 cup all-purpose flour
1 tsp salt
1/2 tsp pepper
6 cups of milk
1/3 cup instant minced onion
paprika
About 1 1/2 hours before serving:
Preheat oven to 350
Grease 171/4 by 11 1/2 roasting pan;
arrange frozen potato's in pan
In 3-quart saucepan over medium heat, melt butter or margarine
stir in flour, salt and pepper until blended
Gradually stir in milk and cook, stirring constantly, until mixture is thickened and smooth; stir in onion.
Pour mixture over potato's and sprinkle with paprika.
Bake 40 to 50 minutes until hot
Make 24 servings

You can do a few different ideas.
You can do a buffet style dinner.
Making a few different courses that way if you have picky guests they have a chose.
Such as:
A simple spaghetti,
2-3 pounds of boxed spaghetti
4-6 cans of sauce-you can buy it in the can and spice it to make it your own
and you can add meatballs or sausage to it
and than grab a bunch of garlic bread-cheapest way is to buy plain bread and had butter and garlic powder or mrs dash seasoning.
do a salad
a chicken dish
coleslaw
rice pilaf
and a dessert
or you can do
minature sandwiches-wraps
a nice fruit salad
chips and dip
veggies and spinach or veggie dip
baked beans
mac and cheese
or you can do this one
sheesh kabobs
such as steak, mushrooms, onions, zucc. or whatever veggies you like
with a nice cheesy potatoe
I do one of two
get 2 10lb bad of potatoes
and jullienne slice them after you boil them just before there tender, mix them with about a stick of butter; some seasonings to your taste; but definately some salt and pepper; and 2 1lb bags of cheddar cheese and bake them for about 45 min on 350 and make sure you cover it with foil. then take some french onions or bread crumbs, frosted flakes on top of them with a little bit more cheese and bake until golden brown. I always had mozarella to the potatoes as well.
or
you can do mashed potatoes; like normal.
but fry up some bacon, crumble it up, get some green onions and chop up and then when you begin to mash the potatoes; put some salt and pepper in them and milk and butter, then add the bacon and green onions and add cheddar cheese. with a dollop of sour cream. Its really yummy.
You can also make a nice apple or cherry crisp for dessert or an easy banana pudding
and a nice cucumber and tomato salad.

I'd make a large lasanga...you could have garlic bread and ceasar salad with it as well. It's simple and easy. If you have people that don't like meat you could do a vegetarian one as well as a meat.

Hash brown casserole or Cheesey potatoes with ham.
Yeah, a good casserole would be good in general, especially if it contained meat/poultry.

Make a large pot of homemade spaghetti, with a crisp
tossed salad, and garlic bread. Works fine and you could make the sauce meatless if you'd like, serve with your favorite wine and you're all set!
