10 minutes after the water comes to a boil. and then let them sit in a pan of cold water for awhile until they become cool to handle

simple: put eggs in pan of warm water, just tap water. Bring to a rolling boil, turn off stove and cover for 13 minutes. They'll be perfect. If you want to check, spin them on their side, they should spin perfectly. If they're raw, (try this first so you know what I mean) they'll keep going with the centrifigal force from the yolk moving. Bring to a boil for 3 minutes, cover pot with a lid and remove from the heat. Let sit in the hot water for 10 minutes and they will be good to go. Works every time.

I let mine cook in a pot until almost all the water is gone, which takes about 20 minutes.

If you cook them too long they will get a greenish color to the yoke.
And you thought Green Eggs and Ham was a kids thing.

I usually cook mine for 10-15 mins after they start boiling. Then I know the yolk won't be runny.
