My friend Kevin and I are teaming up for the bake off with my youth group (blah blah). What should we bake that will blow everyone else out of the water? Something that doesn't take to long to make, like maybe one hour? But don't let that stop a suggestion!

Chocolate Bar Filled Chocolate Cupcakes

CHOCOLATE BAR FILLING(recipe follows)
3 cups all-purpose flour
2 cups sugar
2/3 cup HERSHEY'S Cocoa
2 teaspoons baking soda
1 teaspoon salt
2 cups water
2/3 cup vegetable oil
2 tablespoons white vinegar
2 teaspoons vanilla extract
2 (6.0 oz. each) HERSHEY'S Milk Chocolate Bars, broken into pieces
Directions:
1. Prepare CHOCOLATE BAR FILLING.

2. Heat oven to 350°F. Line muffin cups (2-1/2 inches in diameter) with paper bake cups.

3. Stir together flour, sugar, cocoa, baking soda and salt in large bowl. Add water, oil, vinegar and vanilla; beat on medium speed of mixer 2 minutes. Fill muffin cups 2/3 full with batter. Spoon 1 level tablespoon FILLING into center of each cupcake.

4. Bake 20 to 25 minutes or until wooden pick inserted in cake portion comes out clean. Remove from pan to wire rack. Cool completely. Top each cupcake with chocolate bar piece. About 2-1/2 dozen cupcakes.


CHOCOLATE BAR FILLING

1 package (8 oz.) cream cheese, softened
1/3 cup sugar
1 egg
1/8 teaspoon salt
1 HERSHEY'S Milk Chocolate Bar (6 oz.), cut into 1/4-inch pieces

Beat cream cheese, sugar, egg and salt in small bowl until smooth and creamy. Stir in chocolate bar pieces.

Chocolate-Banana Heaven Cake

1 pkg. (2-layer size) chocolate cake mix (not pudding in the mix variety)
1/2 cup cocoa powder
1 cup prepared Instant Coffee, cooled
4 medium ripe bananas, mashed
3 eggs
1/3 cup water
1 tsp. Instant Coffee
2 Tbsp. milk, warmed
1 pkg. (8 oz.) Cream Cheese, softened
3 squares Semi-Sweet Baking Chocolate, melted
2 cups powdered sugar
1/2 cup Chopped Pecans

PREHEAT oven to 350°F. Grease and flour two 9-inch round cake pans. Cover bottoms of pans with wax paper; set aside.
COMBINE cake mix and cocoa powder in large bowl. Add the prepared coffee, bananas, eggs and water; beat with electric mixer on low speed 30 sec., stopping frequently to scrape bottom and side of bowl. Beat on medium speed 2 min.; pour evenly into prepared pans.
BAKE 30 to 35 min. or until toothpick inserted in centers comes out clean. Cool 10 min.; remove from pans to wire racks. Immediately remove wax paper. Cool cake layers completely.
DISSOLVE 1 tsp. instant coffee in the warm milk. Beat cream cheese with electric mixer on medium speed until creamy. Add milk mixture; beat 2 min. Blend in melted chocolate. Add powdered sugar; beat until light and fluffy. Use to fill and frost cooled cake layers. Immediately press pecans into frosting on side of cake. Garnish with chocolate curls, if desired.

Chocolate Berry Layer Cake
2 baked 9-inch round chocolate cake layers, cooled
1 tub (8 oz.) Chocolate Whipped Topping, thawed
1 cup softened cream cheese
1 tsp. vanilla extract
1/2 cup marshmallow cream
3 cups sliced strawberries

Mix together with mixer on medium spead cool whip, cream cheese, vanilla, and marshmallow cream
CUT each cake layer horizontally into 2 layers. Place 1 of the cake layers, cut-side up, on serving plate. Top 1/4 of the cream cheese mixture & strawberries.
REPEAT all layers 3 times.
SERVE immediately. Or, refrigerate until ready to serve. Store leftover cake in refrigerator.

Coconut-Pecan Pudding Cake

1 pkg. (2-layer size) white or yellow cake mix
1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding & Pie Filling
1-1/3 cups water
4 eggs
1/4 cup oil
1-1/3 cups BAKER'S ANGEL FLAKE Coconut
1 cup chopped PLANTERS Pecans



PREHEAT oven to 350°F. Beat cake mix, dry pudding mix, water, eggs and oil in large bowl with electric mixer on low speed until blended. Beat on medium speed 4 minutes. Stir in coconut and pecans.
POUR evenly into 3 greased and floured 9-inch round cake pans.
BAKE 35 minutes or until toothpick inserted in centers comes out clean and cake begins to pull away from sides of pans. (Do not underbake.) Cool 15 minutes; remove from pans. Cool completely on wire racks. Fill and frost as desired.
