as snow, the crystal structure of water reflects light and so appears white. As it melts it becomes liquid which allows light to pass through - as water does, so it is transparent.

The white in the snow is the trapped air in the water crystal structures. As the snow melts, the air is released, the white disappears. :-)
BTW, a polar bear is not white. His hair made of the same stuff as your finger nails. The color of the hair is really kinda nutural. But his hair is also hollow, the trapped air is great for insulation and to help him stay bouyant for swimming. And of course, it looks white because of the trapped air, just like the snow.

snow is truthfully reflecting all colorations of the sunshine spectrum and so looks white. The reflection is off the ice crystals that type snow. as quickly because it melts that's barely water and turns into transparant.
