they are mason jars for canning. making pickles, things like that. you can get them to vaccum seal, and preserve foods and other things for a long time

They are canning jars. The inner top has a rubber seal around the edge....when you screw the outer part on, it tightens the lid but not enough so that it can create a vacuum after you put the jars into boiling water after you want to can inside the jar. My dad used to make pickles, mama used to make jam. When you take the outer rim off, you have to almost get a can opener to break the vacuum of the lid.

They are jelly/preserve jars
the detachable top is so you can create the airtight seal needed to keep bacteria from growing in your jam.
you take the jar of preserves out of the pressure canner and pop the top on and the heat sucks it down tightly, the screwing part is to make sure that seal is not broken
