This is one of my favorite ways to prepare pork....
I usually use pork loin (tenderloin if you want to spluge), but I am guessing a pork chop would work as well.
Rub with dijon mustard and sprikle all over with finely chopped rosemary and thyme. Sear all sides in a pan on the stove top. Finish in the oven until center temp reads 135 degrees. Remove from oven and let rest. Cut on an angle for a really elegant presentation. SO good!
I like to serve with a apple cider vinegar gastrique (a.c. vinegar & sugar) reduce on the stove until thickened. DELISH drizzled over the top!

If you like to grill, season your pork chops with light salt, pepper and fresh minced garlic (or a commercial seasoning like Durn Good), spray lightly with Pam for Grilling. To get our pork chops to turn out nice and juicy off the grill we use the cookout calculator at charcoalbob.com to determine the grilling time.
Then put a little of your favorite bbq sauce in a bowl to use as a dipping sauce, just like you would shrimp sauce. Simple and delicious.
