everytime when I cook steak, it's either too well-done or too raw (too red inside). how can I know if the steak is medium-rare (i.e. red-pink inside).

Absolutely the best way is to use a meat thermometer. If you don't have one, consider buying one as an investment. One ruined steak could be more than a decent thermometer.

Insert the thermometer into the side of a steak, toward the thickest portion. Here are the temps:

Meat Thermometer Cooking Temperatures
NOTE! The meat continues to cook for a few minutes after you remove it from the heat.


RARE: 130-140 degrees
MEDIUM-RARE: 140-150 degrees
MEDIUM: 150-160 degrees
WELL DONE: 160-170 degrees

I feel therte are three important factors in cooking steak to med. rare. When grilling, to med rare I cook 75-80% of the steak on 1 side first without ever flipping the steak on the grill. Cross-hatching it after about 5 minutes. for a total cooking time on 1st side of 7-8 minutes. Flip the steak and cook for another 3 minutes, cross-hatch, cook 2 minutes remove from grill. Cover the steak with a clean dry towell for 4-5 more min and serve. MMMMM Happy eating.

I never use a fork or anything that pierces the steak so...using tongs, i poke the middle of the steak. the softer it is, the rarer it is. The meat firms up the more it cooks. Once you get a good feel for what medium rare feels like, you can just prod it a little to get to the right doneness for you!

Never pierce or cut your steak that lets the juices out.
a easy way to tell is to make the ok sign with your non demoinate hand (the hand you don't write with.) with your other hand press on the fleshey part of your palm just below your thumb your indek finger is rare your middle finger is medium rare your ring finger is medium and your pinky is well (you change your ok sign with the finger of dineness you want.) After your steak is done to your taste take off heat and let rest for 5 minutes.

Give it the "poke test". Make a fist loosely. Put the index finger from your opposite hand out, and touuch the fleshy part of the fist. Push that finger lightly between the index finger joint & thumb joint. This is what medium rare feels like! Now try it on your meat.

I usuall go 6-8 minutes a side for medium rare for under 3/4" of meat. It works well for me!

its a proportional coloration on the inside. i like mine medium rare. so when i cook it, on an inch thick steak, i like about 1/2 of the inside to be a pink color.

I use the face test... By touching the following facial features you can guage how cooked your meat is:

Cheek = rare
Chin = Medium
Forehead = Well done

Also, dont cook your meat on a really high heat the entire cooking time.

Sear it over a high heat, then turn the gas down
