My old roommate used to make this asian (I think, I know she was asian and ate mostly asian food).

The ingredients I remember are

Eggs
Shrimp
Green Onions

The finished dish would be egg and everything mixed together, but cut up into little pieces\squares. It was sooooooo good. I dream about. If someone could help me out, that would rock.

I'm pretty sure it is not Egg Foo Young, because it wasn't rolled up like an omelet and there was no sauce..

Help!

Depending upon the way it is cooked, it could be a fritata or an omelet or just fried or scrambled.

Thats an Italian dish called Fritatta. And its very simple and serves as a nice appetizer . Heres a recipe i got from
"Recipe Zarr" They have Great Recipes Check them out .

Grilled Onion Frittata
6 servings 40 min 10 min prep

1 red onion, peeled and cut into 8 equal-size wedges
1 yellow onion, peeled and cut into 8 equal-size wedges
salt & freshly ground black pepper, to taste
olive oil, as needed
10 eggs
1/4 cup heavy cream
1/2 cup freshly grated parmigiano-reggiano cheese
2 tablespoons unsalted butter
1 teaspoon finely chopped fresh rosemary

Preheat an oven to 350ºF.
In a large bowl, combine the red and yellow onions, salt, pepper and olive oil and toss to coat well.
Preheat a grill pan over high heat.
Arrange the onion wedges on the pan and cook until they are browned and tender underneath, about 5 minutes.
Turn and cook until the onions are very tender, 5 to 7 minutes more.
Transfer to a plate and set aside.
In a large bowl, whisk together the eggs and cream until blended.
Stir in the cheese, salt and pepper until smooth.
In a 10-inch braiser or ovenproof fry pan over medium-low heat, melt the butter, add the rosemary and cook, stirring, for 1 minute.
Pour the egg mixture into the pan and fold gently to combine the rosemary and eggs.
Arrange the grilled onions on top, transfer the pan to the oven, and bake until the frittata is golden and cooked through, 12 to 15 minutes

I've used this before and its bomb im sure you'll enjoy it as well

Possibly Cantonese Shrimp Scramble.

5 large eggs
1/2 lb medium raw shrimp, peeled and deveined
1 teaspoon cornstarch
1/2 teaspoon salt
1/2 teaspoon fish sauce
1 tablespoon vegetable oil
1 green onion, thinly sliced
Break eggs into a large bowl; beat with a fork until thoroughly blended but not frothy.
Add shrimp, cornstarch, salt, and fish sauce; mix well.
Place a medium frying pan over high heat until hot.
Add oil, swirling to coat surface.
Add egg mixture and cook undisturbed until eggs are almost set, about 1 minute.
Stir eggs gently with a spoon and continue cooking until shrimp turn pink and eggs form creamy curds, about 2 minutes.
Sprinkle with green onion and serve.

Oh. I'm Korean and I've had things like this. I'm not sure of what it's called but it actually is like an omelet except it isn't rolled up and it's like a block of egg (with everything in it) and the person cuts it up into strips.

sounds like a Quiche with out the pastry. Actually sounds good.... how about shrimp and gr. onion quiche w/ out crust...
