Most states require a BS in Biology or related science. Contact your local state health unit and ask what their requirements are. If you live in a state where that position is very competitive then ServSafe Certification is great, but usually states will train you.

Go to a college or university with a restaurant hospitality program. One of the classes is HACCP and ServSafe. If you score well enough on the tests you can be certified to teach HACCP and ServSafe. From there talk to the advisor and job placement office on campus to see what to do next.

Be warned though, many inspection jobs are under-funded so they might not have a ton of job openings.

Personally, I think it would be a blast to be an inspector.
