Spinach & Artichoke Dip
1 (10 oz.) pkg. frozen chopped spinach
(thaw & drain well)
1 lg. can artichoke hearts, chopped &
drained
1 c. Monterey Jack cheese, shredded
1 c. grated Parmesan cheese
Medium white sauce (2 tbsp. butter or
margarine, 2 tbsp. flour, 1 c.
milk)
Dash hot sauce
WHITE SAUCE: Melt butter over low heat. Blend in flour. Cook over low heat until smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Add remaining ingredients until well blended. Add hot sauce to taste. Serve warm with tortilla chips.
Spinach & Artichoke Party Dip
1 (16 oz.) carton sour cream
1 (1 oz.) env. Hidden Valley Ranch
party dip mix
1 (14 oz.) can artichoke hearts,
rinsed, drained and chopped
1 (10 oz.) pkg. frozen chopped
spinach, thawed and well drained
1 (2 oz.) jar diced pimentos, rinsed
and drained
1 lg. (1 1/2 lb.) round loaf bread,
sourdough or any variety
1 lg. round loaf bread, cut in cubes
for dipping
Assorted vegetables for dipping
(optional)
Combine sour cream and party dip mix in medium bowl. Stir in artichokes, spinach and pimientos. Cut slice off top of round loaf of bread. Hollow out center of bread leaving a 1 inch shell. Reserve bread pieces for dipping. Spoon dip into bread shell. Serve warm or cold. To serve warm, bake in 400 degree oven for 20-25 minutes. Cover loaf with foil if browning too quickly. Serve with bread cubes and or assorted fresh vegetables. Serves about 12.

I've seen it with mayonnaise, but I think your best bet would be to follow a recipe (or get a packet--the mixes are good) for alfredo sauce, and put in some drained, chopped canned (or frozen thawed) artichokes and some drained, thawed spinach (squeeze out alllll the water.) If you prefer, you can cook some fresh spinach or stir fresh chopped spinach in the dip, but it'll probably be watery if you just stir it in.
Alfredo sauce is basically parmesan cheese, butter, heavy cream, and a touch of spice--a little garlic and pepper (easy on the salt, as parmesan cheese tends to be super-salty.) Make it thick--put in a little less cream if you want a very thick dip. I'd also recommend a bit of nutmeg (good with both cream recipes and spinach) and some cayenne pepper for a little bite and to enhance the flavor. But those are optional.
