I am getting so tired of my usual side dishes. I make a meat and a veggie but the 3rd item (usually a starch) is hard to think of something new.

I usually make some kind of rice and that's getting really old. Potato dishes are getting old. What else is there to make besides rice and potatoes for side dishes? What do you make with your dinner - besides meat and veggies?

you can make creamed cauliflower that is so good. You steam the cauliflower for about 8 minutes and then take it out and put it in the blender and add 1/4 cup low fat cream and a little butter. Turn on the blender and watch it chop up the cauliflower. It looks like mashed potatoes but taste like a 5 star restaurant you can do the same with broccoli

Well, sometimes I watch my father cooking and he puts little side dishes or extravagant sides. Sometimes he will put some beans and plus... try to make mashed potatoes!!! They are good tasting and better than just plain potatoes. You can put a side of fruit or just a simple salad! you can put chips, or to make your job easier, just have a main dish and whatever is in your pantry.

I keep an emergency box of Stove Top in the cupboard for just such occasions. If you have some onions and celery, saute those up to put in the stuffing. And fresh sage if you happen to have some growing in the backyard!

Risotto and couscous are still basically rice, but different enough. Try those out! Or maybe mac&cheese... or those pasta-roni things.... I would go with the couscous because it's pretty healthy.
