I'm trying to go vegetarian and I want to make something to eat tonight with black beans and long grain rice.... anyone have any recipes to share?

Look at epicurious.com and search for a recipe called "Tommy's Rice and Beans". I love this recipe, I'm surprised I don't have it memorized by now. It's good by itself or stuffed into tortillas with some cheese.

Diet for a Small Planet has recipe I really like called 'Roman Beans'. I don't recall the proportions, what I do remember is it has maybe a cup of parmesan cheese, 1 can of tomatoes, black beans and cooked brown rice added towards the end. really good. try that...
by the way, Diet for Small Planet is excellent book to read if you're going vegetarian. Not only does it have tons of recipes but explains the whys and hows of combining foods to increase the protein value, for example whole wheat pasta + milk + beans together equals better protein than each ingredient by itself...

I LOVE black beans and rice. I don't really use a recipe, though. Mainly the only thing I use to season the black beans is salt and pepper, maybe some chipotles. Why? Well, the idea is that I just layer all kinds of ingredients on the rice and beans, so the beans themselves don't need a lot of seasoning, as long as they are salted well enough. Just follow the cooking instructions on the bag of dried beans (or if you use canned, just heat them up). Prepare your other ingredients separately, then layer them on! Here's the layers I like to use:

-Rice
-Beans
-Grated cheese (sharp cheddar is nice) right on the hot beans, so it will melt
-fresh salsa (tomato, onion, jalapeno, lime juice, cilantro)
-avocado chunks, lightly salted
-a few dollops of sour cream
-a touch more cheese sprinkled on top

Heaven!

Try fresh parsley if you don't like cilantro.

Mexican Black Beans & Rice

Ingredients
2 tablespoons olive oil
1/2 cup green pepper,chopped
1/2 teaspoon cumin
1/8 teaspoon dried coriander
3/4 cup chopped tomato
1 cup chopped onion
2 cups cooked long grain rice
1/2 teaspoon chili powder
1 - 15 ounce can of black beans, rinsed and drained

Directions
Heat olive oil in a large skillet over medium heat until hot. Add onion and green peeper, sauté until tender. Stir in rice, cumin, coriander, and chili powder; sauté for 3 minutes. Add beans and tomato; sauté for 3 minutes or until thoroughly heated.
