Go to the preferences menu iTunes (control + ,) and then click on sharing. Uncheck "share my library on my local network" and then save the preferences. This will prevent your library from being shared....

For a more complicated setup such as Win XP Pro or NT permissions setup please post another more definitive question including all possible information including OS, If XP Pro, sharing style (basic or not), etc.

I am guessing you are trying to prevent local sharing and not Internet sharing of the itunes folder.

If you are using Windows XP with basic folder permissions:
Shared from local users
right click itunes folder > sharing and security > click "keep this folder private"
Shared from local network
right click itunes folder > sharing and security > click "do not share this folder"

If you are in fact trying to prevent Internet sharing I assume you will be trying to hide it from the P2P programing you are using. If so, refer to their specific instructions for removing a shared folder.
