We can never really know how the world was created. Scientists cannot even truly prove that reality exists! I think what is most important is how you decide to live your life and how you interact with the world as it is today...it really doesn't matter how it was made or by whom (if anyone), what matters is how we take care of it now...

The Tanach (Christian OT) is about the relationship between God and His holy people, Israel. If you wanted to tell a story about the origins of your family in order to make it a *special* family, how would you do it? The creation stories are simply a prologue to the stories of the Israelites/Jews and their communications with God. The prophesy included in the Tanach had already happened. Prophesies that never happened were not included in the canonized version of the Hebrew Bible.
The mystical path of Judaism (Kabbalah) explains creation in much the same way as scientists explain the "Big Bang" theory. Daniel Matt (translator of the Zohar) is frequently invited to speak at Astronomy lectures at universities to show how the creation story of Kabbalah is very similar to the "Big Bang."
Why would God give us a scientific explanation of how the universe was created? The is no way we could have understood it 3500 years ago -- nor could we understand it today!

Very good questions. Your third question though is one that I ask all the time. And, how does knowing effect us? It doesn't. Not at all. Never will. But our government and many other governments spend billions trying to find out. I guess that cost is justified for the bragging rights of, "I told so." Of course, the real answer will never be proven, but still there will be plenty of, "I told you so", anyway.
And that same question applies to the theory of evolution. If it is ever proven what difference will it make? None. Absolutely, no difference whatsoever.
Your first two questions, no one knows, but I sure many people will give you their "facts" as to that.

The world was formed by the 'clumping' of debris formed by the creation of the Sun (which is an entirely different story) around a central point over a vast time-span. Eventually these clumps began to exert their own gravitational pull, drawing them together until all debris had been used and the clumps became extremely large and formed planets. The debris began to become compressed under its own gravitational pull.
The very centre became molten due to pressure, whilst the outsides hardened by contact with the coolness of space. Reactions caused by early volcanic eruptions created an atmosphere, mostly composed of sulphur and water vapour. as the atmosphere cooled, this water vapour condensed to form oceans, and the stage was set for life.
We know this because we can see it happening in faraway solar systems, and because of techniques such as looking at rock layers, ice cores, etc. I'm not a geologist, and I don't know exactly how such things are worked out; I'd recommend asking in one of the science sections.
This knowledge doesn't affect us on a day-to-day basis, but it can give us some idea of the greatness and intricacy of the universe, and how much there is to know.

If you walk in a forest you will see seeds, saplings, mature trees, and fallen rotting trees. It doesn't take a rocket scientist to work out the steps by which evolution of the forest occurs.
So take a good astronomy course - from a real university, not just some fundie Bible college, and you will see that it all makes sense.
There are trees alive today in California which have been growing for four thousand years. You can figure out how they grow without having been there to watch it begin.

Either you can read what scientists think or read what a Mid-Eastern tribe thought three or four thousand years ago.
Scientists think that central stars form first (in our case, the sun). The planets begin as a ring system around the star somewhat like the asteroid belt. Gradually through collision and, later, gravitational attraction, planets come together. This whole process took billions of years.
Either that or god waved a magic wand in 4004 BC and zapped everything into existence in six days.

Genesis 1:1 - "In the beginning God created the Heavens and the earth." The earth, and all that it contains were made by God. I know this because it is recorded within the Bible, and I believe in it's every word. And knowing does affect you. If you deny God and believed in say, evolution, then you would not know the truth of the Bible. But if you give Him the credit and search the Bible for more truth, then you would be searching out truth. It all has to be taken on faith.
