I am nearing the end of a photo assistant course in sydney and i'm now on the look out for as much advice as i can get. I'm also looking to assist as many photographers as possible in return for knowledge.

I cannot believe no one has stepped up to give you some advice. Mine, have fun! You have a great field.
Check out your local paper, see if the photographers there need help. Research and join Photography clubs. Find all the photographic business in Sydney and try to get your name in their hands.
Keep researching, ever building your portfolio too. Here are some (and there are a lot) sites that give advice, and have employment opportunities.
