I serve asparagus with all sorts of meats. Stronger flavored meats I think are better (grilled steak, salmon). I find a nice balance with a baked potato and the wine I always match to the meat, not the vegetable.
As for how to cook, I usually cut them in half, lay them on a foil-lined tray, spray lightly with butter and then sprinkle with garlic powder, onion powder, and basil leaves. Maybe a little salt & pepper if that's to your taste. Then broil them in the oven (12-15 inches from heat in an electric oven) for about 8 minutes till fork-tender. Mmmm...delish!

Lightly steamed asparagus with butter or hollandaise sauce and the tiniest sprinkling of crushed sea salt and/or black pepper is a edible manifestation of heaven.
If its just me I have a big plate with a glass of chilled white burgandy and some good brown bread to mop with.
Smoked salmon is nice with it too, as is parma ham or thin pancetta wrapped around it.
Steak and asparagus is always good, but only if the steak is as soft as the asparagus!
If your asparagus isnt the freshest (picked over 2 days ago) grilling it is better- grill on a griddle pan or barbeque to get lovely char stripes, and serve with lamb kebabs and other chargrilled vegetables.
Baking with onions and cheese is yum too! Good side to roast lamb.
Asparagus tips go well in a risotto with peas, chicken and pancetta cubes, and in a stir fry with spring greens, king prawns, and peas.

Asparagus goes well with a lot of different things, salmon as stated above, chicken, seafood, steak, lamb.
We make our salmon covered with thin slices of lemon and broiled in the oven, serve with a wild rice mix. For steak, I would again broil or grill it, serve with traditional baked potato and sour cream, and mushrooms sauteed in butter and garlic. Asparagus goes great with either of those meals.
For Easter dinner, we will probably have a boneless leg of lamb roasted in the oven and served with our favorite hash brown casserole (also good with little red potatoes), asparagus, and fruit salad, and cheesecake for dessert.
Our favorite wine is a white zinfandel, or sometimes a dry red.

Baked Fennel with Parmesan
INGREDIENTS
2 fennel bulbs
1 tablespoon butter
3/4 cup half-and-half cream
3/4 cup creme fraiche
1/4 cup grated Parmesan cheese
DIRECTIONS
Preheat the oven to 400 degrees. Cut the base off of the fennel bulbs, and cut a cone shape into the base to remove the core. You can see the core because it is whiter than the surrounding green. This is optional, but helps the fennel cook faster. Slice the fennel vertically (upright) into 1/4 inch thick slices.
Melt the butter in a large skillet over medium heat. Add the fennel, and fry for about 5 minutes. Stir in the half-and-half and creme fraiche until well blended. Transfer to a shallow baking dish. Sprinkle Parmesan cheese over the top.
Bake for 30 minutes in the preheated oven, or until the top is golden brown and the fennel is tender enough to pierce with a fork.
Angel Hair with Feta and Sun Dried Tomatoes
INGREDIENTS
1 (16 ounce) package angel hair pasta
1/4 cup olive oil
4 cloves garlic, crushed
3 ounces sun-dried tomatoes, softened and chopped
1 (8 ounce) package tomato basil feta cheese, crumbled
1 cup grated Parmesan cheese
1 bunch fresh cilantro, chopped
salt and pepper to taste
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until done; drain. Return pasta to the pot.
Mix in olive oil, garlic, tomatoes, feta, and Parmesan cheese. Stir in cilantro and season with salt and pepper. Serve warm.

Chicken is a must with green veggies, a side of mashed garlic potato's, a really good rich red wine. All the flavors complement each other very well.

CHICKEN AND ASPARAGUS STIR-FRY
1 lb. boneless chicken breasts
1 egg white, lightly beaten
1 lb. fresh asparagus
3 tbsp. low-sodium soy sauce
1 tbsp. cornstarch
1/4 c. dry sherry
2 tsp. sesame oil
2 tbsp. vegetable oil
1 tbsp. minced garlic
1 tbsp. minced fresh ginger
1/4 c. chicken broth
1 red pepper, diced
1/2 c. chopped scallions
1/2 c. dry roasted cashews
3 c. cooked brown or white rice
1. Cut chicken into 1 inch squares. Combine with beaten egg white and toss lightly. Set aside.
2. Trim woody bottom ends from asparagus and discard. Cut asparagus into 1 1/2 inch pieces.
3. In a small bowl, combine soy sauce, cornstarch, sherry and sesame oil and stir well.
4. In a large skillet or wok, heat 1 tablespoon vegetable oil. Add garlic and ginger and stir-fry 2 minutes. Add asparagus and stir-fry 1 minute longer. Add chicken broth, cover and cook 2 minutes or until asparagus is crisp-tender. Remove asparagus and wipe pan.
5. Heat remaining tablespoon vegetable oil. Add chicken and stir-fry until opaque. Add asparagus, red pepper, scallions and cashews. Stir sauce and add to pan. Cook until mixture thickens. Serve over rice. Makes 4 servings.
BAKED ASPARAGUS CASSEROLE
Crushed Ritz crackers (enough to cover bottom of casserole)
2 cans asparagus, drained
1 can mushrooms, drained
1 can peas, drained
1 stick butter
1 c. milk
2 cans cream of mushroom soup
1 c. grated cheese
Place crushed crackers on bottom of casserole. Layer the drained asparagus, peas, and mushrooms on top of crackers. In saucepan melt butter. Mix butter, milk and cream of mushroom soup. Pour over top. Top with cheese. Bake at 350 degrees about 20 minutes.
TUNA ASPARAGUS CASSEROLE
8 oz. egg noodles, cooked and drained
Make white sauce from 6 tablespoons butter, 6 tablespoons flour and 2 cups milk. Add 8 ounces Velveeta cheese to white sauce and let melt.
1 can asparagus and juice
1 (6 oz.) can tuna fish
1 (4 oz.) can mushrooms
Mix all in casserole and bake 1/2 hour at 350 degrees.

Salmon - I just season mine with a little Old Bay seasoning and broil it for a few minutes on each side.
Add a bottle of a good chardonnay or pinot grigio and dinner is ready.

You should totally put melted cheese sauce on top of it and for the main dish do hmmm chicken or steak.
