Shark is similar in color, taste, and texture to swordfish. Both of these fish are sold in steak form. The skin of swordfish will feel smooth, while the shark skin will feel rough, like sandpaper. Raw swordfish is lighter in color than shark and has definite eye-like whorls, which are not present in shark steaks. The skin on a mako shark steak is thicker than that of a swordfish and has more connective tissue. A shark needs this thick skin in order to hold its body shape, for it has no bones.

CULINARY DESCRIPTION

Shark is more versatile than many cooks realize. Typically, it is prepared in steak form by grilling, broiling, or pan-sauteing (frying). For each of these techniques, you may leave the skin on, for it will lift off in one piece once it is cooked. If the center piece of bone-like cartilage is left in, it will also lift out easily after cooking. Marinating the shark in an Italian-type dressing for 15-30 minutes is a quick and easy step to a moist, tender, and flavorful meal.

shark is excellent.
I have had several types, most common here in So. Cal is Thresher Shark. Very similar to Halibut or Swordfish. Great as a shark sandwich... basically replace hamburger with shark and eat! grills the same way.

Here in NZ battered fish and chips is a staple takeaway food to many families. Although we are surrounded by water and some of the freshest fish available in the world, most takeaway stores use shark. It is sold in stores named 'lemon fish' and if you ate it, you really wouldn't be able to tell the difference between that and any other white fish.

Mako shark is delicious - the taste and texture are similar to swordfish. I don't like any other type of shark.

I believe that it was Mako shark I have eaten. It was really good, similar to swordfish.

ive never actually eaten shark myself, but i hear from a lot of people i know personally say they love it. especially shark fin soup! but they also say it's expensive. :(
