I did this once before, but did not write down the recipes I used...and well I wanted to try something different

Here's my three favorite recipes for what you want. I'd love to join you and your wife but I think "three's a crowd" in this instance.

My Favorite Chicken Fajita Recipe
(Healthy and low-fat)

2 boneless, skinless chicken breasts
1 1/2 teaspoon cumin
2 cloves garlic, minced
1 1/2 teaspoon paprika
1 1/2 teaspoon onion powder
1 1/2 teaspoon chili powder
1 small green bell pepper cut into strips
1 small red onion, quartered and separated
1 small zucchini, chopped
8 fat-free flour tortillas
8 ounces shredded lowfat cheddar cheese

Spray a large nonstick skillet with cooking spray and heat over high heat. Slice each chicken breast into bite-sized pieces. Add chicken and seasoning ingredients to skillet and cook for 6-8 minutes, turning occasionally.

Add vegetables and continue cooking until vegetables are crisp-tender and chicken is no longer pink in the center. Serve fajitas on heated tortillas topped with shredded cheese.

Makes 4 servings
Serving Size: 2 tortillas with 6 ounces fajita mixture



Salsa Recipe

This is a very good salsa recipe. Simple ingredients are boiled and blended to created a flavorful, spicy mixture that's great with tortilla chips and on Mexican-style foods. The amounts of onions and jalapenos may be varied; canned crushed tomatoes may be substituted for fresh.

INGREDIENTS:
6 pounds roma (plum)
tomatoes
1/4 pound roma (plum)
tomatoes, chopped
2 tablespoons garlic powder
1/4 cup lemon juice
1 1/2 tablespoons salt
1 tablespoon ground cayenne
pepper 1 1/2 teaspoons ground cumin
1 red onion, chopped
1 white onion, chopped
1 yellow onion, chopped
1 pound jalapeno peppers,
chopped
1/3 bunch fresh cilantro,
chopped

DIRECTIONS:
1. Bring a large saucepan of water to boil. Briefly place 6 pounds tomatoes into water to loosen skins and set color. Drain, peel and crush.
2. Mix chopped tomatoes, garlic powder, lemon juice, salt, cayenne pepper and cumin into the saucepan with crushed tomatoes. Whip to desired thickness. Bring to a boil. Mix in red onion, white onion, yellow onion, jalapeno peppers and cilantro. Continue boiling until vegetables are soft and mixture has reached desired consistency. Remove from heat. Refrigerate until serving.



This margarita mix was perfected in Seattle, Washington based on vast margarita consumption in Tucson, AZ during the 1980s. Nearly every person who has tried this recipe has enjoyed it. Even folks who "hate tequila and hate margaritas" wind up liking this recipe and making their own margaritas.

Tequila One cup (8 ounces)
Triple sec a quarter cup
Limeade frozen concentrate half can (6 ounces)
Lemon juice one fresh lemon
Ice Two cups large cubes
Water a half cup


Mixing the Ingredients

1. Get a blender. You do not need a a good one because there is not a requirement for crushing ice.

2. Put the ice cubes in the blender.

3. Pour in the tequila and triple sec so that the ice starts diluting the liquor.

4. Using your straining device to keep out lemon seeds, squeeze that fresh lemon into the blender.

5. Pour in the lime aide concentrate. Try not to exceed the prescribed amount -- go light on this stuff (if anything).

6. Pulse or blend only long enough to get the concoction mixed so that it sort of fizzes and changes consistancy slightly. Blending into crushed ice is OK, I just do not prefer it.

7. Toss 4 ice cubes into a 12 ounce, salt rimmed glass, and then pour the margarita!

8. Cut up a lime and hang it off the edge of the glass. This is completely optional. Only garnishment.


Have a great dinner party and try to avoid a nasty hangover!!!!

I took this Mexican lasagna recipe and added fajita mix (peppers, onions, chicken, fajita seasoning) instead of the beef and taco seasonings. Also i used sharp cheddar instead of Colby (I hate Colby cheese)

Mexican Lasagna

INGREDIENTS
1 pound lean ground beef
1 (1 ounce) package taco seasoning mix
1 (14 ounce) can peeled and diced tomatoes with juice
10 (6 inch) corn tortillas
1 cup prepared salsa
1/2 cup shredded Colby cheese


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet over medium-high heat, brown the ground beef, and stir in the taco seasoning and tomatoes. Line a 9x13-inch baking dish with half the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.
Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, or until cheese is melted and bubbly.

McCormick makes a good fajita mix. Use flank steak or chicken cut in strips, marinate, then saute with bell peppers and onions. WalMart has a good black bean and corn salsa that you could use, it has lots of cilantro and is exceptional for a jar salsa. Have shredded mexican cheese on hand with some sour cream and flour tortillas and you're set. As for margaritas, the liquor store has some ready-made with the alcohol already mixed in, salt your glass rims, blend the mix with ice and pour into glasses. Can't get much simpler.

Fajita, cut in strips round steak. cut in strips red and green bell peppers. cut into wedges yellow onion and cube some tomato. The amounts vary on your descrestion, cook them all up with fajita marinade (at any grocery store) in a large frying pan

Easy and good, serve with warm flour tortillas

For easy margaritas go to a liquer store and buy the margarita "bucket" you just have to add tequila and put it in the freezer.

A good side would be pinto beans, jalapenos and red rice.

Tangy Chicken Fajitas
INGREDIENTS
1/2 cup olive oil
1/2 cup distilled white vinegar
1/2 cup fresh lime juice
2 (.7 ounce) packages dry Italian-style salad dressing mix
3 whole boneless, skinless chicken breast, cubed
1 onion, sliced
1 green bell pepper, sliced
DIRECTIONS
In a large glass bowl combine the oil, vinegar, lime juice, and dry salad dressing mix. Mix together. Add chicken strips, onion and bell pepper. Cover dish and refrigerate. Marinate for 3 to 6 hours.
In a large skillet, heat oil. Remove chicken, onion and bell pepper from marinade and saute in oil until chicken is cooked through (juices run clear) and onion is translucent.



Zesty Salsa
INGREDIENTS
2 large tomatoes, diced
6 green onions, chopped
1 cup finely shredded Monterey Jack cheese
1 (4 ounce) can chopped green chilies
1 (2.25 ounce) can sliced ripe olives, drained
1/4 cup Italian salad dressing
Tortilla chips
DIRECTIONS
In a bowl, combine the first six ingredients; mix well. Cover and refrigerate for at least 1 hour. Serve with tortilla chips

my favorite is what i call chicken fajita salad, it's quick and easy and absolutely delicious: dice a couple chicken breasts, cut into bit size pieces green peper and onions, sautee' chicken in a little olive oil and fajita seasoning,add onions and peppers just before done ( approx. 4 to 5 min.) stir together, cook for about 2 to 3 min. add shredded cheddar cheese cover and remover from heat. On plates place about a handful of lettuce cut to bit size top with crushed tostito chips top with chicken mixture add a spoonful of salsa and some sour cream sprinkle with chives and diced tomatos, serve with a magarta or cold corona and enjoy.

FAJITAS

1/4 c. oil
1 c. sliced onions
1 c. sliced green peppers
1 1/4 lb. New York steak strips
Fajitas seasoning
1 c. sliced quartered tomatoes and/or 1 1/4 pounds chicken strips, boned

FAJITAS SEASONING:

1 tbsp. white pepper
1 tbsp. chili powder
1 tbsp. garlic powder
1 1/2 tsp. salt
1 1/2 tsp. paprika
1 1/2 tsp. black pepper

Heat large (iron) skillet until very hot. Add oil then add onions and green peppers; saute for about 20 seconds. Add meat. Season to taste with Fajitas Seasoning and cook until steak is brown, chicken is white. Stir in tomatoes and cook until softened. Adjust seasoning. makes 4 servings. Serve in flour or corn tortillas.

No set recipes are the best most times in my opinion. If you want something different go for it. Look at any recipe site or any thing submitted here and then pick and choose the good sounding parts of them all.

Fajita are so easy to make.

Cube chicken breasts and pan fry until cooked.
On a tortilla shell spread sour cream on, then salsa, chicken and shredded cheddar cheese. Wrap it up and enjoy!

Salsa
I make mine with cilantro, green onion, fresh tomato's, seeded,fresh lemon juice ,dash of salt, pepper, jalapenos, all finely chopped, add a dash of salt and pepper, and lemon juice to taste and enjoy a healthy salsa low fat... The hotter the jalapeno the more it will boost metabolism if you were going for healthy.
