If you have not cooked enough of them what you will need to do to help with your timing is cut one open before you put your gravy on and make sure its the same color throughout.

You should ALWAYS check meat with a thermometer, that way you know for sure when it can be safely eaten. The internal tempurature for pork should be 160 degrees.

If you're not sure about your current chops, I would toss'em back in the oven and cook them some more.

Pork should be 170 degrees for well cooked and have a light color when cut (no pink).

yep
called marinating
If it's pink anywhere, it's not cooked and not safe to eat
If it's brown through it's safe
tender is good

Throw it against the wall and see if it sticks. Like pasta, if it's done, it will stick.
