Yes it is fine, just peel them off along with the skin then cook it how ever you please. If you like to eat the skin too, you can just cut the little growths off. This is totally normal, it just means you have had them around a little longer. My kids like when this happens, they will get them and draw faces on it and call him Mr. Potato Heads Alien cousin.

If they are white and look like roots - that is what they are - roots. Normal, especially if you have had the potatoes awhile. Just peel the potato(s) before you eat them. Or plant them:):)

probably taste bitter and/or be a little soggy, but it won't
hurt you. If you cut it in chunks so that one of the root type
things (eyes) stick out of each chunk, and plant them in
a good sized bucket of potting soil or good dirt, you'll grow
you some fine new potatoes.

You can. Cut them off and cut out any that are below the surface of the potato. Personally, I would pitch it and start anew.

Oh yea i know what you mean! They have like things growing on the outside of it, and they're like almost white. Yea it's completely safe to eat. All you have to do is cut them off and put it in the microwave or oven and enjoy!

I use potatoes as long as they aren't brown inside or mushy. That's how you know they are bad.
