In the same way that people spank their children when they are young, but not when they grow up.
The ancient Israelites were a very rebellious group who kept disobeying God, so God had to keep punishing them. After Christ came, He took the punishment for us, so now we ask His forgiveness and turn back to obedience on our own. After the Jews of 2000 years ago rejected Christ, God gave them 40 years to repent and turn. At the end of the 40 years, He destroyed Jerusalem and scattered the Jews to the four winds. The Jews now no longer had a monopoly on being called "God's Chosen People" - now the Gentiles would be included in that as well.

Because once the age of prophesy ended, with the building of the Second Temple, God could not provide the appropriate warnings to mankind via His prophets. Thus, in His mercy, He restrains his anger and interacts with mankind in less obvious ways.
