I love the spring rolls from ruby tuesdays!! or the egg rolls from Chili's! does anybody have the recipe?? or one close to it?

they are the bomb!!!
buy the already made eggrolls dough (is on the produce dept)
1 medium yello onion (chopped)
1/2 red bell pepper (chopped)
1 jalapeno peper (chopped)
1 8oz box frozen spinach (thawed and drained)
1 8 oz black beans (drained)
1 8 oz corn (drained)

2 grilled chicken breasts (season the chicken with salt, pepper, papprika , grill it or broil it ) then chop in pieces

sautee the onion, peppers together till they have soft texture, then add the spinach, beans, corn and finally the chicken. Let it all combine together, there should be very little liquid., or none at all.

In a separate pan, melt 1 tbs butter sautee one garlic very finely chopped (dont let it burn, jsut slowly cooked so it smells like garlic) then add 1 tbs flour and let mix well into a golden color and add 1 cup of heavy cream. season with salt and pepper and let it thicken up...when the white sauce covers the spoon, add 1 cup shreeded monterrey jack cheese. and remove from fire.

In a large bowl, combine the mixture of ingredients with some of the cheese sauce. Add sauce enough to make it cheese and stick together. do not make it to wet. as much cheese as you like.

then follow the direcetion of the spring roll dough pack...and start rolling.

Use corn oil to fry, it tates better. If you have left over cheese sauce, you can use it as a base to make spinach deep or just deep your rolls in it.

Southwestern Spring Rolls



15 Spring rolls 30 min 30 min prep

16 ounces black beans, rinsed and drained
16 ounces corn, drained
2 cups fresh washed and drained spinach
1/4 cup fresh cilantro, chopped
2 garlic cloves, pressed
1/4 cup onions, minced
2 jalapenos, chopped
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
15 prepared fajita whole wheat tortillas
2 cups grated colby or monterey jack cheese
7 tablespoons cooking oil
prepared salsa
sour cream

Combine all ingredients except oil, tortillas, sour cream & salsa, mix well.
Put approx 2 tbs of mixture on each tortilla, roll tortilla into a thin taquito.
Heat frying pan to med/high heat (I use an electric range and set it to 7).
Using 1 tbs cooking oil per 2-3 taquito's, shallow fry in saute pan.
Garnish with salsa and sour cream.

Southwestern Spring Roll


INGREDIENTS:1 green pepper, julienne 1 red pepper, julienne 4 scallions, bias cut 1 tsp. RC Roasted Garlic Base 6-8 drops RC Cilantro Extract 1 tsp. RC Roasted Southwestern Vegetable Base 8 wonton wrappers 3 lbs. cooked, smoked turkey, julienne 8 oz. jalapeno jack cheese, shredded

DIRECTIONS:Combine vegetables, RC Roasted Garlic Base, RC Cilantro Extract, and RC Roasted Southwestern Vegetable Base. Toss well. Lay the wrappers out on a clean, flat work surface. Evenly distribute the seasoned vegetable mixture in the center of the wrappers. Add julienne turkey and shredded cheese. Lightly wet the corners of the wrappers. Fold sides toward the center and roll away from you, being sure to get a tight seal. Fry. Serving suggestion: Serve with spiced mango coulis and watermelon salsa.

I don't have it with me, but you can definitely get it online. I did a search for it last year some time, and it came right up. It's really not hard to make at all. Just type in a search for Chili's Southwest Egg Rolls, and it will pop up. Gosh I wish I could remember all of the measurements for the ingredients. I have it home in the kitchen drawer.

SOUTHWESTERN SPRING ROLL

Shredded chicken or pork, Chile 'n Lime sauce, black beans, peppers and onions, stuffed in egg roll wrapper, served with smoky salsa.

FOR THE SMOKY SALSA:
3 cups drained salsa
7 tbsp. Frank's Redhot Chile 'N Lime™ Hot Sauce, divided use
1/4 chipotle seasoning
FOR THE EGG ROLLS:
2 cups cooked shredded chicken, or pork
1 cup black beans
1/2 cup diced sauteed peppers and onions
1/2 cup finely chopped scallions
1/4 cup softened cream cheese
24 egg roll wrappers

TO MAKE THE SMOKY SALSA:
Combine salsa, chipotle seasoning and 3 Tbsp. Chile 'n Lime sauce. Refrigerate until needed.

TO MAKE THE SPRING ROLL FILLING:
Combine chicken or pork, black beans, peppers and onions, scallions, cream cheese and remaining 4 Tbsp. Chile 'n Lime sauce.

Place 2 Tbsp. filling in center of egg roll wrapper, moisten edges with water and roll tightly, tucking in ends. Refrigerate, covered until needed.

WHEN READY TO COOK AND SERVE:
For each serving, deep fry 2 spring rolls.

Serve with 1/4 cup Smoky Salsa per serving.

Can be made ahead in frozen.
