It depends on your definition of "healthy". If you're looking for fat free, then angel food cake is the one for you. Maybe you don't like refined grains and sugars? Then you might want a carrot cake made from whole grains and honey or barley malt.

If you avoid grains entirely, then raw food brownies made from mashed dates, ground walnuts or almonds, and cocoa powder might be the best cake you can find.
