The food will digest whether you are sitting around or sleeping. The problem with going to sleep too soon after a large meal is that some people have reflux or other conditions, so laying down with a full stomach only makes their symptoms worse. If you do have any digestive, stomach or esophageal conditions, you should wait 2 hours before laying down.
Drinking lots of water isn't going to help. If you're thirsty have a drink. If not, skip it. :)

normally, food stays in your stomach for about 2 hours.. so to prevent having pancreatitis, you should stay awake around 3 hours before going to bed just to be sure, coz when you sleep, digestion process is slow because your body system slows down and relaxes.. you can drink water but not that much as not to interfere with the digestive process.. you can drink a glass of wine or a can of softdrinks after having a heavy dinner so that you wont have any stomach problems the next day

You should wait about 30-45 minutes after dinner before you go to bed. Drinking water will help you, but don't drink too much water.

doesn't matter, you can go to sleep right after. the digestive system will still do the same job as if you were awake, that's what it does it digests nutrients.
however if you are going to sleep right after dinner I would not consume carbohydrates with diner unless your body fat is below average levels.
