It add just a bit of tang to the chicken but most of all it inparts butter fat to the product and keeps it moist through the cooking process

The acid in the buttermilk helps to break down the membranes and helps the chicken stay juicy. It also adds some flavor, but mostly it's akin to brining.

It makes it juicy when it's going to be fried. Plus the buttermilk is really good for battering chicken. Flour really sticks to the chicken when you batter it.

This technique is often used for southern fried style chicken. It does two things, it tenderizes the meat, and also it causes the chicken to absorb water and become more juicy.

You will also find the batter or breadcrumbs will stick better.

I heard it helps drain the blood from the chicken, I could be wrong but that's what somebody told me when I asked the same question.

b/c it give it a crispier texture b/c its a richer tasting milk hence the name BUTTER milk its a southern thing ya'll
