I love to make veggie pita sandwiches: 1 pita, cut in half. I add my fave veggies like onion, tomatoes, romaine and cucumbers. For a "dressing" I use hummus instead of mayo. You could also slap some cheese on there - provolone or muenster works well w/ this combo.
You could also make some black beans and rice. It's not unusual, but it's easy to make. Buy a can or two of whole black beans. Drain some of the gravy off and put it in a pot. Pick the veggies that you're fond of - I personally like onions, jalapenos and green pepper chopped up in mine. Heat it thoroughly...add seasoning. In a separate pot, make some instant brown rice. Serve the beans over the rice - quite filling! If you'd like, you can add some cheese to the beans and put everything into a tortilla. Ta-dah! Black bean burritos.
You could also make veggies lo mein. You don't need a lot of fancy Asian food...if you have some whole wheat spaghetti, there are your lo mein noodles! Buy a bag of frozen veggies that are stri-fry specific. Put your water on for the spaghetti and cook it al dente. While the spaghetti cooks, fix the veggies in a pan instead of a pot. Add the sauce packet from the veggies...drain your spaghetti and throw it into the mix. You can put this over rice if you'd like and add your own veggies. (like water chestnuts, snow peas, etc)

Here's what I do. I like to keep plenty of snacks on hand to reduce the need to eat unhealthy snacks. Some of my favorites are jalapeno hummus and carrot sticks, ants on a log (not just for kids anymore!), pita rounds and yogurt mixed with cucumber, ANY fresh fruit (love it in the winter...reminds me of warmer weather) jello cups (actuially the sugar free is the best, and only 10 calories!). EDIT: Oops almost forgot, my new favorite is lettuce wraps. Anything can be rolled up in lettuce, but my favorite is ground turkey browned in a pan, then add a teriyaki (Soy Vay's Veri Veri Teriyaki is my favorite). Spoon into bib lettuce leaves, or baby iceburg, and roll up like a tortilla. mmmmmmm...so tasty

oatmeal is good and easy to make
rice with corn
take cabbage and cut up, cook with a little oil and water, add onions, garlic, salt, pepper and some chicken breast. Eat over rice. No real cooking skill necesary, just cook it until the meat is done.

Have you tried a homemade version of sushi? You can buy seaweed paper called Nori. Just lay it flat on a counter put in some rice and anything else you like and then roll it up. It's kind of a handy snack actually. I like it with just vegetables... things like avocados, cucumber, celery...
