Follow the recipe on the box!!

If from scratch, use vegetable oil when recipe calls for oil, and use real butter when called for. Do not try to use any other type of oil and don't swap butter for margarine. Makes all the difference. Also, make sure your flour isn't older. I've noticed in cakes that if my flour isn't really fresh, my cake doesn't taste as good and doesn't "fluff" up like it should.

there could be a number of reasons. first one that comes to mind is that they are stale perhaps. another one that comes to mind is that there isn't enough oil/fat to bind the "crumbly" ingrediants. Yet another is that you beat the cake mix for too long (only beat enough to incorporate ingrediants together)

sorry that I can't help you more! are you making these from a recipe? If you are, please follow the recipe closely. Measurements for cakes need to be pretty precise, actually.

Try using applesauce instead of oil. This will bind the cupcakes and make them moist. :)
