I'm sure any aviation buff knows it quite well...the inside of the old planes have a very distinct odor. Insulation? Old hydraulic fluid? Why don't any of the planes in service have this?

Old hydraulic fluids, oil, stale sweat, and other excretions smell the same.
Aircraft that were in combat seem to have the most 'nose', IYKWIM

Partly an expectation on your part and partly because it is like cat urine in the carpet you can just never get rid of that smell.

because the planes today are all insuladited and stuff and you dont see all the cords and wires and they dont use smelly stuff. idk best guess.
