was the older prophet lying when he says his words are ultimate truth and cannot be changed?

If God changes his mind, then he was lying or incorrect in his previous statement that it was eternally true.

This has already been done, Their prophet Brigham Young told them that the day the church allowed blacks (and he didn't put it this nicely) to hold the priesthood would be the day the church fell and crumbled. In the seventy's blacks were suing them over this very thing and suddenly their current prophet had a 'revelation' that they could hold the priesthood.

First of all i can tell that you do not know anything about our church. Our prophet is called by god. We do not get a new prophet unless our prophet were to die and then the president of the quorm of the twelve who by the way works a lot with the prophet will become the next prophet in line. From looking at the other prophets in the past there has been great instructions that have come out from them. Yes they might clarify and expanded on what another prophet has said in the past.

The purpose of revelation is to reveal to the earth programs, processes, and interventions that are needed for the current inhabitants of the earth. All of the prophets: Adam, Noah, Moses had needs specific to their generation and accordingly God revealed his will to them. Likewise, current Prophets receive revelation according to the needs at present.

well, they do say that. But they also say that God can change His mind (as for example the priesthood for people with dark skin). If God changes His mind He needs a way of communicating that with His people, which is why prophets are necessary.

If God is truly omnipotent (all powerful) and omniscient (all knowing) He will not change his mind...he can speak once and that can be final.

However, god is NOT omipotent nor is he omniscient. Cults will continue to be invented as God truly doesn't know everything and he isn't able to do most things. Yet another proof that God is imaginary.

They don't say that. That's the whole point of "continuing revelation". Sort of like the whole "Old Testament vs New Testament" thing. :-)
