Hi. I had the most wonderful tortelloni with aurora sauce in a restaurant recently and would like to make the sauce at home. I would be gratefull if anyone can give me the recipe. Thanks

Aurora is the rosy glow that just precedes the dawn. It is the tomato concentrate in this cream sauce that gives its warm hue.

Ingredients
2 tablespoons unsalted butter
1 tablespoon flour
2 cups whole milk
2 tablespoons tomato paste
salt
freshly ground white pepper

Melt the butter in a heavy sauce pan over medium heat. Add the flour and cook, stirring constantly until frothy, but not browned. Whisk in the milk, a little at a time, whisking constantly. Simmer gently for 10 minutes. Just before serving, whisk in the tomato paste; season with salt and white pepper to taste.

2 tablespoons light cream (15% fat)
1 tablespoon tomato paste
Salt and pepper to taste
1 pinch curry powder
Preparation:
1. Mix yogurt and cream until smooth; add remaining ingredients. Blend well.
2. Serve chilled as a dressing for: salads and hard-boiled egg or as a sauce with cold meats, fish, and shellfish.

Yield:
4 servings

Nutritional Information:
Per serving: 37 Calories, 3.7 protein, 3 g carbohydrate, 1 g fat, 111 mg calcium. Calories from fat: 24%.

Baked Rigatoni With Aurora Sauce



6 servings 25 min 15 min prep

1 lb rigatoni pasta
8 tablespoons butter
4 1/2 tablespoons flour
2 1/2 cups milk
1 cup tomato sauce (perferably homemade)
salt
pepper
1 1/2 cups parmesan cheese
8 teaspoons toasted breadcrumbs

Make bechamel sauce using 6 tablespoons butter, flour and milk.
(Melt butter, add flour and cook until bubbly, then add milk and whisk until thickened).
Stir in tomato sauce.
Add salt and pepper.
Cook pasta until al dente.
Drain, mix well with sauce and 1/2 of the Parmesan cheese.
Turn into buttered oven dish.
Mix remaining cheese with breadcrumbs.
Top casserole with this mixture, then dot with remaining butter.
Bake at 425 degrees for 10 minutes.

Ahhh Teresa As an Italian gal I have a few . Two easy ones i sent Wofkiss & she made Carbonara for Saw & he loved it . I have MANY easy ones & not just tomato based Hugs D :)
