Chocolate sponge cake
4 egg whites
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/3 cup sugar
2 egg yolks
1 teaspoon vanilla
1/4 cup all-purpose flour
1/4 cup cocoa
Line an 8 inch square or round cake pan with waxed paper.
Place egg whites, cream of tartar and salt in a mixing bowl, beat with electric mixer until foamy.
Beat in sugar gradually, continue beating until stiff peaks form.
Beat in egg yolks and vanilla.
Combine flour and cocoa and fold lightly into egg mixture.
Spread batter in prepared pan.
Bake in 400 degree oven 10 minutes or until cake springs back when lightly touched.
Loosen sides with a sharp knife.
Turn out immediately onto a paper towel lined cake rack to cool.

I’ve always been in favor of making cakes from cake mixes. I’m not much of a cake eater and didn’t feel like it was all that important to make GREAT cake. Box cake was good enough. It was, that is, until I tasted my son Nate’s from-scratch chocolate cake. AMAZING! I promptly vowed NEVER EVER to make a box cake again. And really, this cake isn’t much more work than a box cake.
Here’s the recipe:
Mix together:
2 c. flour
2 c. sugar
1/2 c. unsweetened cocoa powder
dash of salt
1 1/2 t. soda
Stir in 1 c. buttermilk
1 1/4 c. oil
3 eggs
2 t. vanilla
Stir in 1 c. boiling hot water
Stir well and pour into a 9Ã13 greased pan. Bake at 350 degrees for 35 minutes or until the toothpick comes out clean.
A few tips: Nate usually uses dried buttermilk and the appropriate amount of water. Sometimes Nate will substitute a 3 oz. package of jello (raspberry or cherry) for 1/3 c. sugar. This gives a whole different flavor to the chocolate.
Another of Nate’s favorite tricks is to bag up all the dry ingredients in a ziplock bag. He takes this along on vacation or wherever he’s visiting. Then he just needs to add eggs, oil, and water.

I'm not sure about the sponge part but the best chocolate cake I've ever made is the Hershey's. I get raves about my cake. The trick is the cup of boiling water. I don't know how, but it works.
Hershey's Chocolate Cake
Ingredients:
2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup HERSHEY'S Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
CHOCOLATE FROSTING(recipe follows)
Directions:
1. Heat oven to 350 F. Grease and flour two 9-inch round baking pans.
2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost with CHOCOLATE FROSTING. 10 to 12 servings.
CHOCOLATE FROSTING
1/2 cup (1 stick) butter or margarine
2/3 cup HERSHEY'S Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract
Melt butter, Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.
You may also use the dark cocoa for a twist.

Dark Chocolate Cake
"This is an elegant cake to make."
INGREDIENTS
2 cups boiling water
1 cup unsweetened cocoa powder
2 3/4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened
2 1/4 cups white sugar
4 eggs
1 1/2 teaspoons vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease 3 - 9 inch round cake pans. In medium bowl, pour boiling water over cocoa, and whisk until smooth. Let mixture cool. Sift together flour, baking soda, baking powder and salt; set aside.
In a large bowl, cream butter and sugar together until light and fluffy. Beat in eggs one at time, then stir in vanilla. Add the flour mixture alternately with the cocoa mixture. Spread batter evenly between the 3 prepared pans.
Bake in preheated oven for 25 to 30 minutes. Allow to cool.

You should check either epicurious.com or allrecipes.com and search under chocolate cake recipes. Both have really great selections and the recipes usually have ratings as to which ones are the best, easiest, healthiest, etc. I've used many recipes off both these sites and have been very pleased!
