What vegetables should I serve on a vegetable tray? And how much of each for like 75-100 people? Like two heads of broccoli or what? I have no idea.

You will need a large foil tray to start. People tend to go for the carrots and celery. You can by the baby carrots in a bag ready for serving. I would get 2 large bags of carrots, 2 bunches of celery, 1 bunch of large broccoli, 1 large head of cauliflower, 3 containers of grape tomato's, 3 bags of radish, and 3 each yellow and red peppers. Wash and cut everything and put in Ziploc bags so everything is ready for serving. Two dips that are easy to make are a cocktail sauce using ketchup and horseradish and sour cream with a hidden valley ranch dip packet.

Another platter people love is wedges of cheese( cheddar, saga,brie and swiss), grapes and Ritz crackers. It's a sure thing.

For that many people you may need four heads of broccolli. :) I would buy the cut up stuff in bags- You can get carrots, broccolli and a few other things pre cut at the grocery store. I would buy 5 bags just in case and keep them in a cooler or fridge. Cut up about 4-5 cucumbers, have a few pounds of cherry tomatos, and put out some sprigs of spring onions- for a twist. Also - cut up a few each of red, yellow and green peppers in strips for a splash of color. That should do you- since its not the main meal you dont have to go all out. A variety of dips would be fun- but you know ranch is a crows pleaser.

Coliflower
Brocolli
Cherry Tomatos
Celery
Baby Carrots
Cucumber

I would probably go with 2 bags of baby carrots, one thing of coliflower, 2 heads of broccoli, 2 containers of cherry tomatos, and 2-3 cucumbers sliced in rounds.

baby carrots, pepper strips(green, yellow, red), broccoli, cauliflower, cherry tomatos, celery. I would use at least 2 of everything (2 bags baby carrots, 2 pints cherry tomatos)
