Oooh, we just had that on Sunday! I chopped up the cold leftover corned beef (which was made in a crockpot), and baked about 6 potatoes. I let the potatoes chill, then peeled and diced them (don't throw away the peels, you can fry them and dip them). Then in a lot of butter, saute chopped red onion and garlic and green bell pepper, fry the potato cubes until brown, and toss in the chopped corned beef until heated.
It was wonderful!

Take a can of corned beef, Frozen hash brown potatoes about 1/2 bag, 1/2 cup of onions chopped or frozen. Cook potatoes
and onions until almost done. Add the corned beef and mix well in skillet. Quick and easy.

We just use canned corned beef and add boiled cubed potatoes, salt and pepper, and brown in a skillet. Easy and much better than the canned hash.

I dont think you need a real recipe...we just treat it like leftovers. Finely chop what you have left from your Boiled Dinner and fry in a mixture of evoo and a bit of butter until browned!

Use that and yyou can choose what you want to but in it and from what you have on hand. It helps to have a food grinder though.
