These are easy to make even better to eat
Ingredients makes 4 doughnuts if you like them you can make more.
8 teaspoons strawberry jam
8 thick slices white bread buttered
25g (1 oz ) caster sugar
100 g (4oz ) self-raising flour
150 ml (5 fl oz ) strong dry cider
cooking oil for frying
1 Spoon the jam into the centre of the buttered side of 4 slices of the bread. Sit the other slices of bread on top, butter-side down press and seal the two slices together around the jam.
2 You can now cut a disc from the bread using a cup or a 3 inch plain pastry cutter. These can be made in advance and chilled until they are needed
3 For the batter, mix the sugar and flour together. Whisk in the cider until you have a thick batter. Heat a deep-fat fryer or a pan of oil, the oil has got to be hot
4 Dip the sandwiches in the batter and fry in the hot oil for a few minutes until golden and crispy on one side. They now need to be turned over with a slotted spoon and cooked for a few more minutes. Remove them from the oil and drain on kitchen paper, dust with caster sugar and serve.
Ice cream goes down a treat with these doughnuts
