Fry an onion till it's brown and add this for texture and flavour. Also, try a little mustard in the mash - wholegrain is nice, but English is better! Also you could cut up cherry tomatoes and dot them on the top.

Interesting question. I would suggest pommes dauphinoises. My understanding of pommes dauphinoises is sliced potatoes layered with grated Gruyère cheese and double cream. Season each layer with salt and pepper, finishing with grated cheese. I often use crumbled Gorgonzola for extra flavour.
If this is not for vegetarians, you could add some fried bacon cubes for added interest, and/or mix crushed garlic in with the cream.
Butter an oven proof dish and layer up. You'll need 300ml. cream for 500 g of potato.
Cover the dish with foil and bake for 30 min. at 180° C. Remove foil and cook for another 20 to 30 minutes. Test that the potatoes are cooked by sticking a skewer into them. As a dish on its own serve with a substantial salad.

Herbs are definitely the answer,
As simon and garfunkel sang, parsley sage rosemary and thyme. Try sticking in a bayleaf (dont forget to take it out after cooking)
Try various herbs in the pie. I find a great way is to smell them and choose based on smell which ones work together.. I wouldnt go over 3 at a time or you may find the combination of taste too much. Half a teaspoon of each should do.

How about a few chilli flakes or some chopped up spring onions. I always put a little mustard in mine to give it a little heat and it also brings out the flavour of the cheese. Or perhaps try a little horseradish sauce, my partner always adds horseradish and it's lovely. Another idea is to add a small chopped onion and some minced garlic in the potatos as they are boiling and mash them with the potatos.
Just try a few ideas, have a look what's in your cupboard and try it out.
Just remembered another idea, chop up some pickled onions and chuck it in too.

Adding additional ingredients. Bacon, onion, vegetables, different types of cheese, different types of potatoes - perhaps trying sweet and white potatoes mixed, using butternut squash or pumpkin mixed with potatoes or replacing the potatoes, flavourings such as mustard or herbs... Fry onions/bacon/thinly sliced leek - add some white wine,let it simmer and in the end add some sour cream. It will make your pie really yummy!
